Comments (35)First we start off with antipasto, and stuffed mushrooms. Then the pasta dish, it will be homemade ravioli, courtesy of my Italian MIL. Then the salad, arugula sald topped with baked stuffed gorgonzola pears. Then the main dish, grilled lamb chops with grilled veggies, and a roast leg of lamb roasted with rosemary potatoes. All served with a lovely homemade red wine. I love my in laws, but I love them more after a few glasses of red :P DH and I are hosting this year to take the burden off my MIL who hosts everything. There will be 11 adults and 6 children, and 1 infant who is still just bottle feeding, no lamb for her! For desert mini coconut cupcakes and traditional grain pie and italian cheesecake. Comments (17)My Mom always does Easter...I'm sure I'll bring a dish of some sort. Last year I made some of those colored deviled eggs! The kids (and adults) all thought it was fun. Here are the instructions: I peeled mine and then cut in half and removed the yolk before dying, although you can dye the entire egg if you like. To have colored deviled eggs, fill a cup with 1/2 cup cold water and add 2-3 drops of food coloring--you will need a different cup for each color of egg. Place the peeled, hard cooked egg into the cup and let sit for 20-30 minutes. Remove when whites have reached desired colored intensity. Proceed to make deviled eggs using your own favorite recipe. Comments (69)I think I made the layered salad once many years ago for some kind of party. At the time I was quite put off by the iceberg lettuce (ick) and the mayonnaise, to say nothing of the bacon, but it was easy and could be made ahead of time. Haven't thought of that recipes in years, but thanks to this thread I went on a search of ways to modify the recipe to make a healthy version, similar to what Seagrass mentioned above. I dunno though, it just doesn't spark joy for me so I think I will pass. Thanks for GC Science I MUST make a lemon meringue pie today. Carrot Dill Soup Serves 6 4 T. butter 1 onion, diced 2 1/2 lbs. carrots, peeled and diced 2 ribs celery, leaves included, diced 8 cups chicken stock (homemade or canned) 1/4 cup plus 2 T. chopped fresh dill 1 tsp. salt (or to taste) 1/4 tsp. freshly ground black pepper Pinch of cayenne For garnish: Creme Fraiche (or sour cream), diced red bell pepper, fresh dill sprigs Melt butter in soup pot. Add onion and cook over low heat until wilted, about 10 minutes. Add carrots, celery, stock, 1/4 cup dill, salt, black pepper and cayenne. Bring to boil, reduce heat and cover. Simmer until carrots are tender, 40 minutes. Allow to cool slightly. Puree soup with immersion blender in the soup pot...OR, in batches, puree in blender or food processor. Return it to the pot, stir in remaining 2 T. dill and adjust seasonings. Heat through. Serve each bowl of soup garnished with creme fraiche (or sour cream), sprinkling of red pepper and sprig of dill....See More- 4 years ago
