easter dinner anyone thought of it yet?

We just bought a house and now finally have room to start having holiday's at our house. SO this will be the first holiday we will have. Just curious one what everyone will be serving

Spiral cut ham, scalloped potatoes, 2-3 veggies and waldorf salad. Lemon meringue cake for dessert. It's the same for the last 15 years. I'll be at the beach most of the day so we'll eat late.

My daughter is the one with the new place (a lovely condo) this year. She's offered to have Easter at her house. As she's not much of a cook, and a vegetarian to boot, that means mom will still be making a good bit of the meal.

We'll have spiral ham, grilled pineapple, probably mac and cheese (a good alternate md for DD). She'll probably do some wonderful side dishes--she does great salads and vegetables. Dessert? so far, we'll be having tiramisu. Haven't decided on the other dessert. Something chocolate, no doubt.

Punk, I'm not sure if I have too many new ideas for you, my DH is a M&P guy so we don't do anything too different. There are lots of yummy menus here from others tho. Our kids aren't coming home this year but we're still doing a big dinner. We don't eat ham (altho I do love it) so often have turkey several times a year for special dinners. It's one of DH's fav meals and I like it altho I think I like the dressing and sweet potatoes even more than the meat! And I love the leftovers so we always cook lots. Our menu is crudities as appetizer, roast turkey, dressing (do you all call it stuffing or dressing?), cranberry sauce, gravy from scratch, crockpot scalloped potatoes (we usually do mashed but thot these would be easier), mashed sweet potatoes, some green veggie - either asparagus, French green bean casserole, or baby peas. I'm going shopping tomorrow so I'll decide then. I often change my mind at the last minute so will have everything on hand. Honestly haven't decided on dessert - something easy unless DH wants to make pies tomorrow. He makes a great apple pie. However I might make baked custards which I like better. Some topping on them. LOL I shouldn't have posted to this until after the dinner, I change my mind so many times.

I grew up on a farm, and we had chickens also - just for the eggs. It was scary sometimes collecting eggs because I would frequently find cottonmouth snakes in the barn, and they are very dangerous. I liked the chickens when I was very young and used to chase them around to pet them. Of course they didn't like being caught, but I would chase them until they got tired and gave up. I didn't name them because they were all white, and I couldn't tell them apart. After we no longer had chickens, a couple of wild (or loose) peacocks (one peacock and one peahen) decided to move into the empty chicken coop. The peacock moved in first and was a bit neurotic because he wasn't getting enough attention, and so he would strut for anything with a pair of eyes, including my agoraphobic cat, whom he terrorized whenever I took him outside. The cat was named Tina, but that was before I found out he was a male. He was married to my other cat Eichendorff, whom I called "Ike" for short, although I had to have the marriage annulled. Lars

Our Easter dinner will be on Sunday afternoon. We only have about half of the family. Our oldest son and his family are vacationing in FL. I have a very easy meal planned. The cooking will be done on the grill. We'll have ham slices and I think I can heat the twice-baked potatoes on the top shelf in the grill. I hope to bake some special bread tomorrow. For dessert we will have Strawberry shortcake and lemon bars. We will only have one little kid, but we will have a egg hunt, indoors. I think the weather is expected to be nice and warm. Yesterday was up in the 70's, which is amazing for MN, but it is already humid out there.

Sis, Dad and I just started discussing yesterday... My sister will be hosting, with an assist from DH and I (time to get my little red wagon so we can easily bring our goodies around the corner to Sis' house). -Hor d'oevures... Not sure what we'll be serving for hors d'oeuvres, but already on the menu is: Pizza rustica (I make anywhere from 10-12 depending upon who I feel like giving one to (you have to rate high on my list) -I am thinking of modifying an asparagus dish I saw that calls for wrapping stuff around blanched asparagus (flattened bread, prosciutto, etc) but have to give it more thought as I don't want to compromise the beautiful asparagus I am seeing) We typically have a platter of antipasto, which is really a must have, so perhaps it'll be just that and the pizza rusticas. -First course we were thinking of doing perhaps some fresh ravioli. I saw Giada do a chicken cheese ravioli with a lemon zest sauce, so perhaps we'll play with that, eliminating the chicken. I just got the pasta-roller attachment for my Kitchenaide, which will make prepping the ravioli a breeze. -Second course, perhaps a salad in Parmesan cups. We did this two years ago and it was fantastic. -For dinner, so far we know we are going to make a nice stuffed pork loin. Our local Italian store does a nice job of it, it comes out so moist. Perhaps some simple roasted chicken as a second choice for the kids and whomever doesn't want the pork. I'll make a nice merlot or cabernet-based gravy or perhaps defrost some pork gravy I've been saving and kick it up a bit with some wine and herbs. -Veggies: We agreed on a few veggies, one baked, one roasted, and perhaps a steamed veggie. Will be finalizing that within the next week. -Starch...I'm thinking something potato. Perhaps Ann's Perfect Roasted potatoes will be the way to go. I love, love, love them. (Did I say I love them). -Dessert is left to the experts. One of our guests is master of all things baked and we leave that to her. Dad will want to bring something, so perhaps he'll make a grain pie. That's it so far...not much detail, but it is an iterative process and should be finalized by the end of the week. Sue

ACK! I hadn't even thought of it yet!

We normally have spiral cut ham, scalloped potatoes, asparagus, deviled eggs, rolls and then some other variables to go with it. ...Except for the one year that DH was working away over Easter, and I had a completely different dinner that I wanted to try. I had a huge bowl of Pasta Primaverde, and several different side dishes.

This year... I have no idea yet! Mexican Chef Salad sounds good. And I know I'll have deviled eggs, and hopefully the carrot shaped marzipan cookies I usually make...

Well I'm thinking Ham, corn, party potatoes, Rolls and my mom (nodakgal) is bringing the pineapple casserole and the neighbor boy was selling these butter braids for church so I bought one I thought it would made a good dessert Blueberry & cream cheese mmmmmmmmmm

Recipes....I need recipes....

I don't have a clue what we'll have....I'll have to talk to the girls to see...Here it is never just one of us fixing the meal...Everyone brings things.

My problem is always the table...we have a large round table that has a large leaf..but that will not seat all of us. But it doesn't look nice to put the oval table with retangle ones. We all have some of those heavy duty plastic tables that would work great if we all brought ours. But what do I do with my dinning table.

We just talked about it last night. I think we're having it at our house. I will make a ham, scalloped potatoes, lasagna, corn, buns, and something for dessert.

Once in a while I like to do Mexican Food for a Family Get together. I can make Chicken Enchiladas and Beef Enchiladas and Freeze them, saves on a labor intensive day.

W/Beans, Spanish Rice
Everyone fills their own Taco w/lettace, tomato & cheese
I like to serve JalapeÃ±os, Guacamole and Sour Creme on the side.

And of course, we rearrange my sitting area to accomodate 2 folding tables w/chairs.

I don't know yet. Mom and I'll be in Los Angeles for Easter this year, so whatever DD fixes. Probably ham.

Used to be a big deal at my house. Ham, au gratin potatoes, a vegie tray, fruit tray, rolls, deviled eggs, of course, and a couple of pies.
Now it's just another day. I don't even know when Easter is this year ...

I guess my sister-in-law is going to have Easter dinner at her house. I'm disappointed,but I understand because she wants to have it as it's also her daughter's birthday.

Good grief - March 23rd is approaching FAST - guess my stepson and I will go out and eat somewhere. This is the first year without Dear Husband and some of his family - it will be a sad Easter for us.

Congratulations on the new house, yankeegirl. Are you all settled in? Don't know what we'll have. It'll probably just be the two of us and I have a turkey breast and a prime rib in the freezer. Probably one of those.

We're playing in a golf tournament Easter Day and then a bunch of us will go out for an Easter dinner.

My Mom always does Easter...I'm sure I'll bring a dish of some sort. Last year I made some of those colored deviled eggs! The kids (and adults) all thought it was fun.
Here are the instructions: I peeled mine and then cut in half and removed the yolk before dying, although you can dye the entire egg if you like. To have colored deviled eggs, fill a cup with 1/2 cup cold water and add 2-3 drops of food coloring--you will need a different cup for each color of egg. Place the peeled, hard cooked egg into the cup and let sit for 20-30 minutes. Remove when whites have reached desired colored intensity. Proceed to make deviled eggs using your own favorite recipe.

We're all tired of ham right now so we're tossing around a few ideas. DIL's want to cook it this year...Yippee...got my vote!

DS#1 just asked me what we were doing. Guess I will do a ham, and the scalloped potatoes everyone mentions here sound good too. Deviled eggs, Glenda's pineapple casserole, peas and some kind of dessert, I guess. Maybe I can convince DD and SIL to join us with GS too.

In recent years, when the kids were all in college and out working, we have not had a fancy meal as none of the kids were here. Now I guess they are ready to come back for Easter dinner too.
