I'm having brunch. Egg casserole, cheese potatoes casserole, that marshmallow/pistachio salad thing (I think it's called Heavenly Something or Other), Sliced Ham, Sliced Fruit with a yogurt sauce, pastel Deviled Eggs (just like you), and Ice Cream Pie. Maybe I'll add something else, but I haven't decided yet.

We usually have the same thing every year since the kiddies always want their favorites. So,we'll be having baked ham with a brown sugar and pineapple glaze,baby green lima beans,sweet potatoe casserole,mac and cheese,baby carrots,deviled eggs and either fruit salad ( with mini marshmallows,fruit cocktail,maraschino cherries,crushed pineapple,mandarin oranges and sour cream) or grape salad..maybe both,home made crescent rolls and hummingbird cake for dessert.

The rest of the family is going to my sister's for Easter (that's a 5 hour drive each way and we were just there at the beginning of March, so we aren't driving it again). Hence it will probably be just me and my BF...

I'll probably make a slightly trimmed down version of the usual family Polish meal, but it will include Babka, kielbasa, pierogies, ham, and e. eggs :) Not sure what else I'll take the time to make. It's supposed to be in the 70s here this weekend, so that means we'll be GOLFING too. :)

This year we'll be staying at La Paloma Resort in Tucson over Easter. They have a big, special Easter Brunch that we'll be attending. I have no idea what they'll be serving, but I bet it'll be yummy! We'll probably be eating dinner at the resort, too. We're going there to spend some time with DS.

OK, now you've got wondering? What are pastel deviled eggs? I'm making deviled eggs too for our dinner so I'm intrigued. Can you let me in on your recipe? Thanks.

It will be just the two of us, but we will have our Easter favorites, ham, grilled asparagus, sweet potatos, green pea salad, deviled eggs, rolls, and some sort of dessert. Maybe lemon pie. I like to make my deviled eggs into little hatching chicks, very cute.

This is what I mean by pastel deviled eggs:

Hard boil the eggs as usual and take out the yolks. Then I use the regular Easter Egg dye that they sell at the supermarket to dye the whites. They take on the most beautiful colors. Then fill in with your favorite egg yolk mixture. It makes a pretty display on the table.

Yep, that's how I do it. That's how my mother did it. No one's gotten ptomaine poisoning in the 50 years I've been associated with it.

Ewwwww...I don't know about eating a GREEN deviled egg! You guys come up with the best! 50 yrs. of pastel deviled eggs, OA! Wonderful! TFS... since we have unseasonably warm weather right now, I think we are going to b'bque...ham & green eggs??? Nah, kidding...hamburgars, brauts, potato salad, baked beans & pastel deviledf eggs! Gee I wonder if 'Pastel Deviled Eggs' are a regional thing.. This is new to me, and I'm thinking I might make some too. I think the kids would get a kick having them.
Would it be easier to dye the eggs before you slice them to take out the yolks? Just wondering.

Wow everyone sounds like your on top of What's for Dinner. OA, I have never made the pastel ones but thought I would make them since GD will be here. I've seen them like you make and they are so pretty.

This is something new I want to try. First boil the eggs and then crack the shells but not breaking through completely. Leave the shells on.

Mix up food coloring egg dye and place the eggs in the different colors over night. The next morning they will have a tye dyed effect. You can then slice in half and make your deviled eggs. I will try to take some pictures and post if they turn out.

If I get lazy, I will just add food coloring to my egg yolks. I bought some pastel food colors so plan to use them.

Just a Basic Deviled Egg Recipe
6 hard boiled eggs  peeled and sliced in half. Combine the cooked egg yolk with the following and then fill the egg white with mixture.
1/4-1/2 Mayo, Miracle Whip or Sandwich Spread
1 tablespoon sweet relish
a squirt of mustard
Salt & Pepper to taste

So did "Mrs. Seuss" make green deviled eggs for Easter brunch, and that's where "Dr Seusss" got the idea for his book, Green Eggs and Ham? LOL

Lots of good ideas here! DD will be having brunch, but i'll be making Quiche, one broccoli, one bacon/spinach, and also hash browns w/onions/red pepper. We'll be having Mimosas too, which will put us all in a happier-than-usual mood. ;o)

The only reason I think dying the white before you take out the yolk might not be a good idea, is because the dye may not penetrate the whites completely. That's probably why Punk's tie-dye eggs turn out, well, tie-dye looking. So, when you slice the egg in half, the part that shows when you display the eggs in a dish (the part that surrounds the yolk mixture) won't be completely colored. Now, I could be wrong. You'll just have to try one and see.

Punk, I'm not sure if I have too many new ideas for you, my DH is a M&P guy so we don't do anything too different. There are lots of yummy menus here from others tho.

Our kids aren't coming home this year but we're still doing a big dinner. We don't eat ham (altho I do love it) so often have turkey several times a year for special dinners. It's one of DH's fav meals and I like it altho I think I like the dressing and sweet potatoes even more than the meat! And I love the leftovers so we always cook lots.

Our menu is crudities as appetizer, roast turkey, dressing (do you all call it stuffing or dressing?), cranberry sauce, gravy from scratch, crockpot scalloped potatoes (we usually do mashed but thot these would be easier), mashed sweet potatoes, some green veggie - either asparagus, French green bean casserole, or baby peas. I'm going shopping tomorrow so I'll decide then. I often change my mind at the last minute so will have everything on hand. Honestly haven't decided on dessert - something easy unless DH wants to make pies tomorrow. He makes a great apple pie. However I might make baked custards which I like better. Some topping on them.

LOL I shouldn't have posted to this until after the dinner, I change my mind so many times.

We're having the family here for Easter dinner and will have a very traditional meal, consisting of:
Borcht soup (Polish version, my MIL will be bringing), Honey Baked Ham, roasted lamb with peppercorn crust, scalloped potatoes, orange glazed sweet potatoes, roasted asparagus (oldest DD), birthday cake for DH (middle DD)and dinner rolls.

Right now I am ironing napkins and have been cleaning the house.

DS and family coming here for dinner this year. Baked ham, potatoes, gravy, corn, coleslaw, cucumbers and onions, deviled eggs (think I'll try the colors too--never had them before either) and angel food cake with lemon sauce spooned over.

New recipe from WW message boards that I might try this year. Caramel Apple Salad. 8 oz. FF Cool whip, 8 can crushed pineapple, 4 apples cored and diced, 1 small pkg. FF/SF butterscotch pudding. Chill in fridge for a few hours and serve. Sounds like a dessert salad to me, I'll let you know how we like it! ;o)
