1st time bringing old house up to code: do I choose a GC or individual

My first time remodeling. Mid Century (1958) bungalow, 880 square feet, single story, 2 bed 1 bath. I need to bring the whole house wiring and plumbing up to code; remodel the bathroom, kitchen and entry hall; and LVT flooring to half, plus a gazillion little things that have weaseled their way on to the list.

My question is this: do I hire one General Contractor to do the whole thing, or hire out the electrical part, the plumbing part, the painting part, etc.? Having never done this before, I wonder that a GC might be more cost but less fuss. Whereas, parting out the tasks might increase the chaos (timing, communication breakdowns).

Does anyone have insight to this? Pros, cons, warnings? I'd be grateful for any tips! Thanks.
