Dehydrated potato flakes uses

I ordered some dehydrated potato flakes, since I've had trouble finding them in stores, and I noticed yesterday that the Italian potato gnocchi that I like lists them as the second ingredient.

My plan was to use them when I make potato gnocchi, latkes, or potato pancakes, to absorb excess moisture, instead of using flour. I already have potato starch, which I have been using in bread and occasionally as a thickener.

What else would you use dehydrated potato flakes for?

I do not intend to make instant mashed potatoes with them - I just want to use them as an ingredient. I hope they will keep long enough for me to use them up. I ordered a box that has four one-pound packages, and I will take two of these with me to the desert next month.
