Comments (16)Sure. Sherry is Sheshebop, long time member here, but she doesn't post much anymore. I made this one for my annual soup party a couple of weeks ago and there were no leftovers! Beef Barley Soup (Sherry-Sheshebop) serves 8 1-1/2 lbs. boneless beef chuck 6 cups beef broth 2 cup sliced celery 2 cups sliced fresh mushrooms 1 cup sliced carrots 1 medium onion, chopped 1 tsp. salt 1 tsp. dried rosemary, crushed 1/2 tsp. pepper 1 clove garlic, minced 1 6 oz. can tomato paste-I only use 3 oz 1 cup quick-cooking barley I use regular pearled barley Trim fat from meat, cut into 1/2" cubes, and brown in olive oil. In a Dutch oven, combine the meat, broth, celery, mushrooms, carrots, onions, salt, rosemary, pepper, and garlic. Bring to a boil; reduce heat. Cover and simmer 1-1-1/2 hour or until meat is tender. If necessary, skim fat. Stir in tomato paste and barley. Return to boiling; reduce heat. Cover and simmer about ten minutes or until barley is done. You could make this in the crock pot, and then when you get home, add the barley and tomato paste and heat for 10 minutes on the stovetop until the barley is done. This soup will also freeze well. Comments (6)It will freeze fine even with cooked potatoes. Just freeze what you will use for a meal in quart freezer zip-locks pushing all the air out. So many things freeze ok. Might lose a bit of that fresh-from-the-pot zip, but starting from frozen I always start with some fresh onion, celery, herb, or your apple...add the frozen on very low heat and cover to steam/thaw. Even the whole prepared meal with the sausage would be fine. For guests I like the fresh prepared but we never hesitate to freeze any leftovers for a quick mid-week meal for us. Even slaws and pickles will freeze 'ok'. Just don't expect the 'crunch' if you prefer that. Most krauts are soft with liquid/juices. We had a frost so I pulled some greens and heads of salad, chopped, then wilted/quick saute and froze topped off with some stock. (I'll add to winter soups). half pints. Go for it and experiment.
