Does gazpacho freeze well??

We had a bumper crop (for us) of tomatoes and picked even more before the anticipated hurricane (which was a dud on the outer Cape) so DH made gazpacho. More than we can eat in a reasonable amount of time before it gets "fizzy". Has anyone put in in the freezer and been happy with it later? Other option is to share it with a neighbor, who doesn't like tomatoes but she has houseguests who might appreciate it.

I use cukes in my gazpacho, so no it wouldnt freeze well.

This becomes a matter of definition and taste. It also depends on the amount of oil, how well emulsified it is, how lumpy it is, how starchy it is, etc. It will be "good" food when you go to use it, but the texture may change, and it won't have that fresh from the garden taste. You can blender it to re=emulsify if needed, or you can make it into a cooked soup, or use it as a soup base. I've had good luck freezing a batch that had a lot of oil and starch. It defrosted pretty much as it had been, but it wasn't in the freezer long enough to go really icy. Other times, I haven't even tried to have it be gazpacho again (for good reason), and just put the block into the bottom of a soup or chili pot.

I decided against pressure canning when I found the website below, which suggests freezing gazpacho to save it. While I also contend that fresh is best (including gazpacho, salsa, marinara, etc), I like to extend the harvest as long as possible, which is why I can my veggies. I also buy lunchmeat in the bulk pack at Sam's. I keep one pack in the fridge and everything else goes in the freezer. SLICED cheese (processed, not block) freezes well, too. Again, I buy the large pack at Sam's. I break it down into packs about the size of a regular pack of cheese and freeze the rest.

Oh wow, just noticed you are making all of these yourself? They all would benefit from a few things waiting until the heat and serve time...a half hour before party time. (keeps cooking during the party even on a simmer) Cheese, cream/milk, coconut milk, herbs, etc. Basically anything that is added last in the recipe that says "add last and bring to temp and serve". Canned corn is kinda dead tasting and usually full of sugar. Frozen, added morning-of, would be better. Puree half of it for creamed corn. Side bowls of fresh herbs, limes, cilantro, grated cheese, croutons, toasted slices of baguettes, tortilla chips...even if it is already in the soup, folks like to customize their bowl, :) (tortilla added to the soup gives a nice flavor and breaks down in the broth and really good, but adding half later is nice for the texture) Almost all soups freeze just fine as leftovers cooked all the way as a recipe even with a pasta or rice...but do taste like a leftover. Holding off an ingredient or two will give it some freshness, like the chopped kale or fresh chopped tomatoes. When i thaw leftover soups, i always dig in the fridge and look for something fresh to add, like a fresh frozen salsa, pesto, shelled edamame... You are on the right tract by holding off what makes sense. Keeping the list and menu planned and organized for what goes into where and when can be tricky. (imagine what a restaurant chef goes through all day, every day! yikes) -don't mean to be anti-canned goods, but most of those recipes passed around are coming from the big manufacturers of processed foods, so the same flavors can be made with much fresher ingredients without the chemicals and fake flavors.

You are welcome. I don't have alot of freezer space..well I will once the Turkey comes out this weekend. LOL So I guess I have no excuse for getting ahead at that point huh? LOL I have several old issues of Better Homes and Gardens Christmas Cookie magazine..I love going through them every year and trying atleast one or 2 new recipes to me from them.

Don't know about you but my gazpacho isn't emulsified. and i don't use any starch in it.....and I do use cukes and onions and tomato, peppers and some celery and mine is not "chunky" and freezes...and thaws very well.

If yours is chunkier and it gets watery when thawed, I would use some fine dry bread crumbs to thicken it up....a very traditional addition to the dish.

Thanks for your reponses. We've decided to share with a friend so won't be going the freezer route. First time in many years we've had enough tomatoes to splurge making gazpacho.

I freeze my fresh gazpacho in two cup batches, defrost it as needed and then make a soup with it adding V-8 juice and a touch of sugar. Then simmer gently 'til solids are cooked and serve with a generous tablespoon of sour cream topping each bowl. For adults an added teaspoon of vodka is welcomed, A 'head' recipe to play with.

Yes, it's not an emulsion but traditionally in Spain they add bread. That's all whizzed up with the veggies. According to this website, it's great for freezing.

Yes. The bread is what I meant by ”starch”. And there's a lot of olive oil in the traditional gazpacho I'm used to (I prefer less oil), which has to be whisked with fury to meld with the water from the veg so it will hold together.
