Comments (12)I halved the Ferber recipe I found on Greatest Hits thread, and cut down the chocolate even more (2 oz for half batch). "From Mes Confitures by Christine Ferber. Raspberry with Chocolate 2 3/4 lbs (1.2 kg) raspberries, or 2 1/4 lbs (1 kg) net 3 1/2 cups (750g) sugar Juice of one lemon 9 oz (250g) extra bittersweet chocolate (68% cocoa) Pick over the raspberries. Omit rinsing them so as to keep their fragrance. Put the raspberries through a food mill (fine disk). In a preserving pan, mix the raspberry pulp with the sugar and lemon juice. Bring to a boil and cook 5 minutes, stirring gently and skimming carefully. Add the chocolate, grated. Mix and then pour into a ceramic bowl. Cover with a sheet of parchment paper and refrigerate overnight. Next day return the mixture to a boil. Continue cooking on high heat for about 5 minutes, stirring and skimming if needed. Return to a boil. Check the set. Put the jam into jars immediately and process this in a BWB for 10 minutes (use half-pint jars). Notes: After discussion with Melly, I used 4 oz bittersweet chocolate and 1 oz unsweetened. I used a mix of red and black raspberries but I think you want whatever berries have the richest, deepest flavor. Good on ice cream, or swirled through yogurt, or spread on popovers." Comments (19)Is this a fresh or cooked or "to be canned" salsa recipe? Three very different animals! If you're not going to can it, you might try a little cornstarch. Here's a recipe below I got from my friend. She actually cans this up every year but it does NOT meet safe canning requirements. Also, you might try using paste tomatoes. I made all my salsa with roma tomatoes last year, I really liked it. Tomatoes vary greatly in their watery-ness. I know "watery-ness" is not a word, but I think it is appropriate! Salsa (this makes 15 pints, so you can reduce the amounts for a smaller batch) 12 lbs. tomatoes 7 large green or banana peppers or a mix 2 large onions 5 cloves garlic 11 jalepeno peppers, seeds removed (I'd use about six probably) Chop all of the above. Simmer for a while. Add: 1 cup white vinegar with 6 TBLSP corn starch dissolved in it. 1/2 cup oil 3 TBLSP salt (That seems like too much to me!) 1 TBLSP paprika 1 TBLSP sugar 1 bunch cilantro It was good salsa! But I would never can it with the oil in there. The vinegar ratio sounds a little low to me too. Comments (2)Agree that I don't see any real safety issue although I might be a bit concerned about all the extra water it would add by using juice. But like Rodney said the main impact would be on the much thinner consistency by using only juice and no solids. Comments (32)@ Bill_minn_3b I had a feeling someone was going to tell me that but I had to ask anyways because the emerald cedars look so lush and healthy unlike the white cedars I have lol ;) The patch of land where the shrubs/trees are is partially owned by neighbour so it's not a simple matter of me clearing everything. Plus I don't like taking down healthy mature trees unless they're diseased. My main reason for having hedges there is to block the view of my neighbour's backyard/property all year round. Between May-Oct it's not a problem, it's actually quite nice when there's green foliage, which blocks the view but between Nov-Apr I see all the junk in my neighbour's backyard from my living room.
