Comments (4)If it were me, I'd go for the Bluestar rangetop (not the cooktop), and another brand's separate wall oven(s). First, because it sounds like--reading between the lines of your post--that's what you really want. Second, because the star burners on the Bluestar are awesome. Having said that, the Bluestar customer service issues and oven issues would drive me up a wall, but you'd avoid that with just having the rangetop. I think the Capital Culinarian will be great, but if you aren't going to use the oven part of the range much, why sacrifice the star burner design. Instead, get the Bluestar's burners on a rangetop, not deal with the Bluestar oven issues, and and have another brand's wall oven. Comments (5)Anecdotally people say that BS simmers but there is no way to compare in the way you can the top end of heat, BTUs to BTUs because they have never said what the BTU rating is on the low end as other manufacturers have done. They rate in temperature which is pretty meaningless. There are work arounds for that though. The high BTUs,with more flame to the center cannot be worked around other than to use something like a cast iron pan instead of a wok. Only you can decide if it is worth it to give up that function for $2000. You might also buy the package and sell the Miele rangetop and buy the BS. Search Wolf blue chipping on this forum. Comments (0)I think I'm narrowing things down to getting a BS 36" range top. I really like the idea of 2 25K burners on the 48". While I probably have the space, I honestly can't visualize needing 8 burners, ever. I contacted BS told them I don't want a simmer burner and could I upgrade on the other burners. Their reply was yes, but back burners can't be more than 18K For any burner upgrade there is a $399 up charge. My Florida Russel Range has 6 open burners 15K ea. I find their various burners off putting. It's like I have to do too much thinking of which burner to use for what. Maybe it's not an issue but..... Comments (2)I think you'll be fine. We have a 30" Bluestar RNB and two 24" Miele ovens: an XL CSO and a SpeedOven. The reason we didn't get the rangetop is that we already had the range prior to the remodel. But the Miele ovens are new. I find, I now very rarely use the Bluestar oven. The Miele (even without going XXL) fits pretty much everything I need. If I had to make changes, I'd probably get a second CSO instead. If you are paranoid about capacity, you could get the XXL. But I doubt you'll need it any time other than (maybe) for Thanksgiving. There really are only two things that I still use the Bluestar oven for. The broiler element is the closest you can come to a commercial salamander in a residential kitchen. We use it several times a week. By comparison, the Miele CSO has a much inferior broiler, and the SpeedOven is outright anemic. The CSO is awesome. It's such a game changer. Also, it preheats so much faster than the Bluestar, where I always need to plan my whole prep time around preheating. We now use our ovens so much more frequently, and it makes cooking a lot less of a chore. In general, if you wipe the oven out right after having used it, it is super easy to keep clean. The steam really helps with making sure that nothing much sticks to the walls. But I still am reluctant to cook really splattery foods in the CSO. For those, I fall back to the Bluestar, where I honestly don't really care about keeping it pristine. So, yes, I think you'll be fine with two Miele ovens and a rangetop.
