Comments (19)Trevor would never say this himself but forget any other online dealer if you decide to go with Bluestar and just buy from him (http://www.eurostoves.com/). He's extremely active on this forum and has come to the aid of many here to solve their problems with a manufacturer even though they didn't buy it from him. With regard to the burners on the Bluestar vs Viking.. One thing you should also consider is that the combination of the star design and being open produces heat that is extremely even. AFAIK, Viking burners, even on their open models, are the traditional cap design. There is no center ring or even center air flow opening which would help to pull the flames towards the center. That means on the larger BTU burners, the heat is still more towards the outer edge rather than in the middle. Granted this is much improved with the open burners but in my experience, Bluestar still wins on even heating. Add to that the higher BTU, you've got a cooking machine. Now I've never owned a Viking open range and only cooked on one a few times at a friends house but I did cook on a restaurant range that supposedly used the same burners as the Vikings back then. Comparing what I remember from then to what I have now, I actually like my Bluestar more than that restaurant range. Bluestar is an absolute joy to cook on. Comments (14)thanks for everyones opinions! my wife and I have been members of this forum for only a week and have been reading/reviewing and thinking about posting new questions all the time. I can't believe we haven't used a home forum like this before. I think (for now) we are going with a Capital Culinarian 48"; 6 burner with griddle. I'm a little skeptical about the open burner, but my wife is convinced the extra cleaning effort is well worth the cooking performance....this choice is mainly being made off of reviews we have read and talking with sales staff at AJ Madison (NYC). We have no experience working with an open burner....is it worth it? What are the benefits? We're still not sure about the wall ovens...we're now looking at Capital, Wolf, Bosch, and Viking. Gaggenau looks really nice, but is very pricey. Any thoughts on these brands? I'm thinking we will buy a double in lieu of (2) singles....i've read that if a double breaks down they will both be effected. Overall, i think we are moving away from Viking. In terms of cooking we have (3) kids under 10 and entertain a fair amount. At least twice a month we throw/host a get together. We have a pile of family who visit our house and we are always cooking/prepping food. My wife has a very busy work schedule so we end up cooking much more on the weekends when we have more time to spend in the kitchen. My wife has taken a few culinary classes (several months each) and is eager to experiment with new methods. Comments (7)My home is under construction so I am not yet using my appliance choices. I am going with Blue Star. I have never used Capital so I can not comment on that. I have had the Wolf cook top and wall ovens, viking range and thermador range in past homes. Of those I would say that Wolf AND Viking were equal. However, Wolf is having issues with the interior ovens cracking, I am sure you have read all that. Viking is just making a comeback so who knows. I did have to open the Wolf oven to turn my food for even cooking. The Wolf cook top is not that powerful. I think with Wolf in particular you are paying for the name. It lacks power. It is pretty, and you will get the best service. So if that is the most important thing for you then Wolf is your best bet. Thermador was a very big disappointment for me. The oven cooked unevenly and the griddle took a life time to get hot and never actually did get hot enough to enjoy cooking on it. The Viking was a work horse and eventually had issue with the screws on t the door. Not a big deal. I know they had issues with this but it really was not a big deal. After I had mine the company sort of went down hill and got a bad name. I am going with Blue Star Platinum range top and the new electric wall ovens. I want the the open burner. (personal preference) For me, I also want the 25K BTU burner for wok cooking. It does offer a true simmer. I will be able to throw the griddle on where I want and getting hot enough is not going to be an issue with the high power burners. I am not a trained chef but I love to cook and do A LOT of it. I have not heard any feed back on users of the new BS electric wall ovens but I like that it has a pizza stone in the bottom. I am hopeful that this feature will prove to be wonderfully useful with pizza and rustic breads. It fits a full sheet pan and has 5,000 watt Infrared broiler. My top priority was a wall oven with French Doors. I think I found an oven that had even more than I was hoping for. All in all, just consider what is your number one most important thing to have and go from there. Then just consider how you cook and what you really need or want. You will find comments positive and negative on everything. Wolf will give the best service, or so everyone says. If that is the most important thing for you then just prioritize the other things on your list and see what you are left with. Coming to my decisions were gut wrenching for me. I changed my mind what seemed like a 100 times. I finally figured out what was important to ME besides the french doors. Comments (6)Definitely take Viking off the table. I really like the Thermador star-shaped burners--much better than having that dead circle in the center of each burner. But I don't know Thermador's reliability record. Wolf's burners used to come stacked, which was a nice feature, but I am not sure if they still do. Wolf's customer service used to be considered the best, but they've been having problems with the oven blue finish on the dual fuel ranges - it chipped shards of enamel with multiple owners (there may even be a lawsuit somewhere I think I heard), and Wolf has done nothing about it. Remember, you will need a large powerful hood over this 48" range. Make sure your exhaust ducting is sufficient for that! The duct needs to be 8" or 10" diameter, depending on the hood.
