missindie, I'll express what I am sure is not the consensus opinion, but I would keep the original trim detail over your sink! I think its wonderful that these details are still intact in your kitchen. Part of why we bought the house we did, was due to how many original details were still in tact in this house. We love the 100 yrs of history our home has. When we remodeled our kitchen we made a point to keep an old wall of open shelves with (what some would see as "dated" or "out of fashion") hand-crafted, one-of-a-kind mill work, as well as the wood details/arch over/around the sink area. I vote that you embrace the history, and make if a feature! It is the original detail we preserved that everyone always gushes about in our house. (apologies for poor lighting in photos, ...I just quickly snapped a few phone-photos without any "staging" of our kitchen)

I don't have pendents or recessed lighting - so no help there, but if you don't have under cabinet lighting, add that to your list. My under cabinet lighting is the most helpful lighting I have. At a guess, I would say 2 pendants over the island, but your lighting store should also be able to help you. It depends on what you use and if your recessed lights light up the island - then pendants aren't necessary. Change out the track light over the sink for sure.

You would have to work the dimensions of this out to make sure it works, but what about something like this? If the island doesn't fit, you could do a peninsula instead.You could also flip the cooktop/sink walls and the island orientation - I went back and forth about that, but I thought that since you can see the back wall from the front door, the cooktop there probably looks nicer than the sink.
