Pig Pickin' Cake

Hello All,

I made a pig pickin' cake recently. It turned out good but was wondering instead of using vanilla pudding in the frosting with the crushed pineapple and cool whip could I use orange jello instead?

It would be more of an orange flavor for the frosting. I noticed when I first made the frosting with the vanilla pudding the frosting was soupy. The longer it sat it firmed up. By using the orange jello do you think the frosting will firm up or do you need to use a pudding mix instead? Thanks so much for your help.

Pudding and jello are 2 different products. Pudding is milk based, jello is water based. (Plus I don’t think jello will gel if mixed with pineapple. Chemistry thing involving enzymes.)

Maddilee, that’s fresh pineapple that has the enzymes. The enzymes are killed off in the canning process so canned pineapple will jell fine.

Kimberley, I’m not familiar with the term “pig pickin’” but I’m guessing you liked the cake. Before anyone can advise you on suitable recipe substitutions, it would be helpful to see the recipe.

You did not say how many men you must feed at each meal? Make many ground beef dishes healthier by using ground turkey instead: ~ taco meat (black beans added?) with all the toppings for tacos, flour and corn tortillas, fresh fruit, cookies and lots limeade and lemonade, iced tea - keep the taco meat filling hot in a crock pot, covered, insulated with newspapers and/or towels ~Italian meat sauce and cooked penne/ziti layered in the crock pot and kept hot, garlic bread and tossed salad, brownies, iced tea ~Pulled chicken or turkey BBQ in the crock pot, buns, slaw, fruit, baked beans, Pig Pickin' Cake, iced tea I'm going to make this for my guys at my local service station soon: ~Supersize Stromboli Sandwiches 1 lb ground beef (or ground turkey) 1 lb pork sausage (or turkey sausage) 1 green bell pepper, chopped 1 onion, chopped salt and pepper 1 jar(s) pizza sauce 1 tsp italian seasoning 1/2 tsp dried basil 1 loaf italian bread 1 pkg sliced pepperoni 2 c mozzarella cheese 1.Preheat oven to 350ÃÂ°. 2.Fry ground beef, sausage, bell pepper, onion, salt and pepper until browned; drain well. 3.Add pizza sauce, Italian seasoning and basil. Stir to coat and simmer 15 to 20 minutes. 4.Split Italian bread in half lengthwise; place on large sheet of heavy duty aluminum foil. Place a layer of pepperoni on bottom half of bread. 5.Add a layer of the meat mixture; top with a layer of grated mozzarella cheese. 6.Place top half of bread on the layers; wrap well in foil and bake 15 minutes. 7.Cut into 6 pieces. My japs are bigger than in the shops now, but I don't think they are ripe. I accidently picked one (it snapped off) and so I cut it open. It was unripe but edible, though I didn't like it much. I like to bake, so I like to bake pretty much any of the cakes. I do not consider cheesecake a cake, and I don't particularly like it, but I bake them for Elery regularly as they are favorite of his. I also do not consider Boston Cream Pie to be pie, and it is the cake The Princess asked for on her birthday, so i gladly made it. We all ate it, so it must have been OK. I also made a Tres Leches cake for my birthday a year or so ago, and although it was kind of soggy, I thought it was good, as was the Italian Cream Cake I made for Elery at Christmas. It's not as much fun for me to make "plain" cakes, but Ashley likes Texas Sheet Cake, and Madi and Maci both like "vanilla cake". Amanda is celiac, of course, so she just wants gluten free lemon bars, LOL. I do have a weakness for moist chocolate cake with dark chocolate ganache, but it just takes a tiny bit to be enough, it's so rich. Annie

I made a pig pickin' cake for a party once, (using a mix for the cake part) but I didn't want a whipped topping frosting so I just made a regular ol' frosting with butter and powdered sugar and stirred in some crushed pineapple. Big hit.

I didn't have the cream cheese, but it inspired me to just do a regular frosting but add pineapple to it.

I always wonder at the name of this cake. Years ago, many years, I got this recipe as a Pea Pickin' Cake. I assumed then that the name referred to country personality, Tennessee Ernie Ford. One of his phrases was Pea pickin' good. I have wondered if someone misheard, or misread a recipe as pig picking? Does not matter anyway, LOL.

There's a whole range of speculation on the name. Really moist and light orange pineapple cake is what it is . . .

I think the name comes from the fact that it's served at pig roasts.

I linked it for the frosting. I can't remember where I got the cake recipe. There are many variations.

I hated "whipped topping" too...but when I became lactose intolerant it satisfies the whipped cream itch without a tummy ache.

When I made it before, the frosting turned out runny. What solved my problem was draining the mandarin oranges ( I don't care for pineapple) before mixing them in with the pudding and the Cool Whip. Nice and fluffy :).

I simply call it Mandarin Orange Cake, but Pea Pickin' and Pig Pickin' Cake names came from when this would be served for big pea pickings and pig roasts, I read somewhere. It's one of my favorite cakes since it's not too sweet and it hits the spot after a heavy meal.
