I take malted butter and add minced garlic. Dip dried chicken pieces in that . Then in a mixture of equal parts freshly grated Parmesan and bread crumbs, I use panko if I have it. that has been seasoned with Italian seasoning , pepper. I didn’t add salt as the parm tends to be a bit salty. However, I am a salt pig so I would have if I wasn’t worried about the health aspect. Let that chill for a bit then bake.

I prefer chicken thigh.

Cold weather needs spicy chili and hot soup. Or, with your leftovers - make chicken Parmesan. Maybe Hot German potato salad instead. Warm is the highlight for such cold temps. Don't forget hot tea with lemon, or cocoa bombs, or Irish liqueur with strong coffee and whipped cream. It is cold outside but you can make it cozy with hot food and plenty of hugs.
