You don't say which is what color, but guessing the trim is white dove. Yes, white dove can look dirty/dingy in the wrong light. North light is an enemy as is artificial light. Natural light is really important when you choose any colors, but whites and lights can show so differently from the samples.

Another issue could be the ceiling color....if white dove is hitting a whiter white, then it is going to show gray.

The trim is paint matched to our cabinets which are a bright white. Crown and door molding are same color but look totally different and throw all of the wall colors off

Then it is the light bulbs and/or the natural light which is throwing things off.

You say "bright white"...no matter how bright, all whites have undertones. Do you have the name of the white?

Try B.M. Light Pewter. It has more of a gray undertone than your choices.

Again, the ceiling paint could be influencing, as well. If the trim is bright white and the ceiling is another white, the contrast may be causing the obvious.

Take a section of the ceiling and paint it the bright white, in flat finish.

We know the same colour just in various sheens can appear somewhat differently.

But I think we can also underestimate the impact of geometry upon colour.

The same colour used on both wall and ceiling can appear to a noticeable degree a little darker and more greyed, when viewed upon the plane of the ceiling.

The angle of crown molding can change that same colour even further in certain lighting too. Just look at photo examples of crown molding in different settings.

Personally, I think these changes add depth and tone to a space. Attempting to be rid of them completely is trying to fight how colour is fundamentally affected by light.

To my eyes all those variants create a more layered effect, adding interest to your colour
