Comments (19)Oooo, Carmel?! Now THERE'S a really lovely place!! Expensive, but yes - very, very lovely. And yea, I bet they wouldn't let you back in upscale Carmel after the Garlic Festival! Ha Ha. I never went to the festival, but drove through Gilroy one time - and boy! You could REALLY smell that garlic from quite a ways!! So you /or your parents never took you to HMB while you lived in CA? I guess it'd be about a two hour drive. But there were many places in CA I never got to either - like Yosemite (what a shame). I don't think they had digital cameras at the time I was living there ;), but I have some photo prints around somewhere taken from those days. 'course, you can see a lot of pics now by just going to google images. On another note, so I had the seeds saved from my pumpkin and started wondering what the difference is between those and the pepitas you see in the store. So I googled it, and poked around on some of the sites. Then I stumbled across one saying that pumpkins are bred for different uses and that the best pumpkin for seeds is the Austrian Styrian pumpkin. The seeds in it are hull-less! Curious if anyone has tried growing that variety before. I found a site that sells the seeds: http://www.cherrygal.com/pumpkinstyrianheirloomseeds2011rare-p-13886.html. The flesh does look pretty ugly, you'll see in google images, so makes sense just to grow these for the seeds! Marj Added note: I got 6 cups of pulp out of my pumpkin, and about 1 1/2 - 2 cups water (didn't measure it the first time I poured it out of the bowl I was draining in, so guessing from the second amount I did measure). Comments (2)If you are talking about substituting butternut or acorn squash of the pumpkin, you can use any recipe for a pumpkin pie that you like. If you are cooking the squash yourself, just make sure that you mash it up real well or puree it in a blender or food processor. A lot of folks like the recipe on the back of the Libby's canned pumpkin. But your pie made from freshly cooked squash is going to taste way better than canned pumpkin! I would use 2 cups of your cooked and pureed squash. One ounce is not going to make a whole lot of difference. LIBBY'Sî Famous Pumpkin Pie Prep: 15 mins Cooking: 55 mins Cooling: 120 mins Yields: 8 servings This is the traditional holiday pumpkin pie. This classic recipe has been on LIBBY'Sî Pumpkin labels since 1950. This pie is easy to prepare and even easier to enjoy. Just mix, pour, bake for a delicious homemade tradition. Ingredients * 3/4 cup granulated sugar * 1 teaspoon ground cinnamon * 1/2 teaspoon salt * 1/2 teaspoon ground ginger * 1/4 teaspoon ground cloves * 2 large eggs * 1 can (15 oz.) LIBBY'Sî 100% Pure Pumpkin or 2 cups cooked and pureed winter squash * 1 can (12 fl. oz.) NESTLÃÂî CARNATIONî Evaporated Milk * 1 unbaked 9-inch (4-cup volume) deep-dish pie shell * Whipped cream (optional) Directions MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. POUR into pie shell. BAKE in preheated 425ð F oven for 15 minutes. Comments (28)Can't help with the original post, other than to say if you use spice cake you may not need any additional spices, or maybe just 1/2 to 1 t. of pumpkin pie spice mix for a true "pumpkin spice" flavor. I will also contribute a really great recipe. If you can't decide between pecan pie or pumpkin pie, this bar recipe is the best of both worlds. -Grainlady PUMPKIN PIE SQUARES Base: 1 c. all-purpose or whole wheat flour (your choice) 1/2 c. brown sugar (can reduce it to 1/4 c. if you'd like) 1/2 c. butter (softened) Mix until crumbly and press into a 13x9x2" baking pan. Bake 15 minutes at 350°F. In a large bowl (or blender) combine: 1 (15-oz.) can pumpkin (puree) 1/2 c. brown sugar 1 can (13.5 oz.) evaporated milk 2 eggs 1 t. cinnamon 1/2 t. ginger 1/4 t. cloves Beat well and pour mixture over baked crust. Bake 20 minutes at 350°F. Topping: In a small bowl combine 3/4 to 1 cup chopped pecans 1/2 c. brown sugar 2 T. butter Sprinkle over pumpkin filling and bake 15-20 minutes more. Cool in pan on rack. Cut into 2" squares. Yield: 2 dozen. Grainlady notes: You can use 2 t. pumpkin pie spice mix for the cinnamon, ginger, and cloves. I use coconut palm sugar instead of brown sugar (which lowers the glycemic impact).
