Steeping aromatics in oil

Well this was a first for me. I made chili oil yesterday which required steeping spices in hot oil. Not very difficult although it was a bit tricky to maintain the 200-225 temperature range for an hour. I kept swinging too high and low. I think that I erred too low. I didn’t get big foaming when I poured the oil over the chili flakes. I was worried about burning the peppers. Nonetheless the oil had a lovely aroma and packed some real heat. I used chili peppers I grew and dried. Here is the recipe I used.

It made me wonder about making other flavored oils. Especially after someone’s thread about having a sensitive palate.
