Comments (13)Nancy, I was very surprised by how moist and juicy it stayed, I was afraid it would be dry as I did not brine it, although I did rub the outside with olive oil before roasting. I haven't done a chicken, I don't know if smaller would be easier or more difficult, but it'll be my next "project". I do like Ann T's suggestion of roasting the stuffed rolled bird on the bones so that there are drippings available to make gravy, mine had nearly none. Oh dear, Colleen, I do hope everyone in your family recovers quickly and completely. If it helps to know, it took about 15 minutes to bone that turkey, I'm sure it'll take much less time the next time. It could easily be boned the day before and packed into a ziplock type bag for use the following day, or even tossed into a cooler and transported. After stuffing it took about 2 1/2 hours to cook through, another 10 minutes for resting time, so it's a lot faster than a traditional bird too and stuffing could be tailored to taste or dietary requirements. Comments (1)Cranberry Cornbread Stuffing 2 C cranberries 1 C water 1/2 C sugar 1 lb. sausage meat, I use Jimmy Dean Sage breakfast sausage 8 C cornbread, cubed and dried in a very low oven 2 large Granny Smith apples,peeled and diced 2 medium stalks celery, diced 1 medium onion finely diced (1/2 cup) 1/4 C chopped parsley 2 tsp. thyme leaves 1/2 tsp salt 1/4 tsp. pepper 2 tsp marjoram leaves Combine cranberries, water and sugar in saucepan. Bring to boil, lower heat and simmer 10 minutes. Drain well. Transfer to large bowl. Saute sausage in medium skillet breaking into small pieces, 5 minutes. Drain. Combine cranberries and sausage. Add cornbread, apples, celery, onion, parsley, thyme, marjoram salt and pepper. Toss gently to mix. Can be made day ahead. Comments (8)My husband loves stuffed peppers so I make them frequently. I usually make them Greek style, with a filling similar to dolmathes (stuffed grape leaves). As with the grape leaves, I usually serve them with unsweetend, plain yogurt. Depending on my mood, I'll stuff them whole or cut them in half. Yemiste (Greek Stuffed Peppers) 4 large bell peppers (green, yellow, red, etc.) Stuffing: 1 pound lean ground beef or lamb â cup raw, long grain rice â cup water 1 large onion, finely chopped 2 - 4 cloves garlic, crushed or finely minced ¼ cup olive oil 1 8-ounce can tomato sauce 1 teaspoon dried mint 1 teaspoon dried dill 1 teaspoon oregano 1 teaspoon salt 1 cup hot water or broth Pepper to taste Pepper Preparation: Slice off the top of the peppers. Remove white membrane and all seeds. If desired, remove stem from top piece and use to "cap" the stuffed pepper or chop and add to filling mixture. For softer peppers, lightly steam before stuffing. Stuffed Pepper Preparation: Sauté onion and garlic in olive oil until translucent. If using, add reserved chopped pepper. Add rice and â cup water. Parboil rice until almost all liquid is absorbed; set aside. In bowl, combine ground beef or lamb, parboiled rice, onion, garlic, tomato sauce, mint, oregano, dill, salt, and pepper. Mix thoroughly. Place peppers into lightly oiled baking pan. Salt cavities lightly. Stuff the meat/rice mixture into peppers. Add half the hot water or broth. Cover pan. Bake at 350° for 60 minutes, until rice is tender and vegetables are cooked. Check at 45 minutes and add more water or broth if needed. Let stand covered 15-20 minutes.
