Heating milk for yogurt

I have been making yogurt lately. Both for my mom and myself. My mom and her partner were taking antibiotics for a bit - broken toe and Lyme’s respectively.


Anyhow recently I ordered several cultures from a company that has a truly daunting variety. I tried to follow their directions carefully rather than my normal heating milk in my instant pot and adding a few tablespoons of whatever yogurt I had on hand. The main difference is heating the milk about 20 degrees hotter. The results seem somewhat firmer so I like it.


BUT I end up with a fair amount of burnt milk stuck to the bottom of the pot. I heat in a heavy CI po. I have tried heating the milk very very slowly. Today I heated the milk in a double boiler. Nothing seems to help. Any suggestions appreciated.
