Pizza Party - Need new peel, recipes
Comments (65)It will be interesting to hear your recipe, trailrunner! I just made a small batch (way too small as it turned out), this was enough for two pizzas. Minced garlic from 2 heads, simmered slowly in around 1/4 cup olive oil, for 5 minutes only, being carefully to not let brown. I can't remember for sure, but I think it was almost equal parts garlic and XV olive oil. Then, added a small can of tomato paste, 1/4 cup sugar and a couple Tbsp of water, and 1/4 tsp of oregano and pepper. The crusts do look different but I'm pretty sure they are both the Baguette recipe (which I must attempt this week, having found my pans). The second crust looks more like the Bittman recipe, but that was because it was made in a square pan, more deep dish style. I wasn't thrilled with either crust this time. We had a hockey game in the middle of the day so I made the 4 batches of dough in the morning and let them proof in the fridge, then skipped the second rise for the baguette recipe. Maybe they rose too long? Next time, I'll shoot for around two hours before oven time. Then again, I tend to not eat when I am hosting, so maybe I am imagining the difference. Everyone else loved the pizzas, which is all that counts. Comments (58)I've never had much luck with growing good tasting eggplant Rachel, but I am going to keep trying! I am in charge of a children's garden and one of the beds is a "Farm Animals" theme. I have chickens and hens and cockscomb planted in it, and eggplant. Last year I grew an Italian variety and i got ONE eggplant from my plant. Next year I am going to try growing the little white ones, for the looks. But I might be able to sneak some long ones into the rainbow bed in the indigo row! Melissa I LOVE spinach pie. I make a version called "Albanian Spinach Pie" that I got from someone on CF. I think it was from Linda in Tennessee but that was way back in the day before I was fastidious about writing down the source. I don't make it too often though, since spinach pie gets soggy languishing in the fridge and with just me it would take forever to eat it up. I sometimes make it for parties if I have the time. My SO loves spinach pie which is a plus for him! OK, here's the molasses cookie recipe. There are two versions. One is mine which cuts the quantity down by a third, and the other is the original from Grandma. Pretty sure she used Crisco for the cookies but I use a mix of butter and margarine or all butter. Tillie Grieve's Molasses Cookies Preheat oven to 375 degrees. Bake for 8-10 minutes. 2 eggs 1 cup shortening 1 1/2 cups sugar 1 cup dark molasses 2 tsp. vinegar 2/3 tsp. ginger. My notes say you can add 3/4 if you want them spicier. 1/2 - 2/3 tsp. salt 2 tsp. baking soda in 1 cup flour Add gradually 2 1/3 more cups flour Chill and roll into balls. Flatten with a glass dipped in sugar. No notes on how many this makes. I also have instructions for making MORE, which may be the authentic recipe and the other is my cutting it down. 3 eggs 1 1/2 cups shortening 2 1/4 cups sugar 1 1/2 cups dark molasses 1 TBLSP vinegar 1 tsp. ginger 1 tsp. salt 1 TBLSP soda in 2 cups flour Add gradually 3 more cups flour. Comments (40)My BF was diagnosed with stage 4 esophageal cancer 3 1/2 yrs ago and after chemo, radiation, loss of part of his tongue, jaw replacement and throat replacement with muscle from his arm was told he would have to live with a PEG tube for the rest of his life. He refused and learned to down Ensure, aspirating a little each time but swallowing tests show it is not detrimental as he has learned to drink over a sink and he coughs out the last little bit. He has not been able to gain weight beyond 140 lbs (he looks like a stick man) even downing 16 bottles of Ensure a day and eventually adding whey protein powder until I met him. He likes to race in Enduro motorcycle competitions so is high energy. I am an RN and can't stand to see people using Ensure as a meal replacement, it is only meant to be a supplement and other than the vitamins and protein only contains oil and sugar with milk solids. I figured if he could down anything I could get him back to consuming vitamins, fat, etc. through natural foods and put some weight on him. The sugar in the Ensure has also taken a toll on what was beautiful white teeth. He had purchased a Vitamix 5200 (pricey but worth it) to mix another powdered sweet drink he found (can't remember the name) to put weight on. The vitamix will actually dessimate anything you place in it and is so fast it will heat the food so hot that you can't drink it. I have learned to blend the weirdest foods together to get the high calories and the only problem I've had is with the broths/juices/milk you have to add to get it to the very liquid consistency will sometimes dilute the flavors. I literally blend anything I eat for him and he is eating better than ever. I now taste everything (sometimes it sounds like it would be gross) and have been astounded at how flavorful meals can be. He has gained 10 lbs over the last 2 months since I add cheese, butter, use whole milk, and for shakes blend high fat nuts like Macadamia and coconut (he loves) and add to them. I have noticed that chicken and dumplings is his favorite because the base of the soup is all I need to use to thin it so it is full flavor. Also for some reason the italian dishes like spaghetti, lasagna, etc. even when thinned severely with beef broth keep the original taste. White sauces are best thinned with chicken broth and milk (both) and sweet and sour chicken is best thinned with apple juice. He is Jewish so when we made potato latke's I put the apple sauce and sour cream in and thinned with apple juice and milk and it tasted almost just like mine in a liquid version. One potato latke thinned equalled 64 ounces so thank goodness he can drink alot! Next time I may add a few potato flakes for extra calories. He has started blending sushi and thins with seafood broth found only at Central Market here. I've done steak with potato including sour cream, butter, bacon bits and thinned one time with milk and another with beef broth and added beef gravy...he loved it! Most of our "soups" come out restaurant quality:-)My next jump is to make steak with Au Jus and Demi Glace to try to get the flavor to come out better. I encourage you all not to be afraid to try different things together and remember that on a liquid diet you need to increase your calories significantly. Comments (24)I can't remember who it was who turned me on to Love Beets. My first reaction was why would I buy cooked beets imported from England when we have great beets here, mostly year round, though with variations in size and quality. The answer, of course, is that they're an alternative to cookies and really yummy. I kept hoping someone would have a similar recipe, and maybe I read wrong but I don't think so. They say they "cook them in mild vinegar". That sounds like boiled in vinegar to me, but I'm not sure. They're very different from roasted with vinegar, or seasoned with vinegar after cooking. I'm not a huge vinegar fan, but the sweet beets, plain, with the vinegar taste are fabulous. They also have a honey/ginger one, which is a total standout. Replicating them is on my to-do list.
