Speed Oven questions

Hi. Thanks in advance for the responses

We are doing a kitchen reno and will have Thermador range 48 pro with convection oven and steam.

We are also thinking about putting in a speed oven under the island counter because it would be a quick oven plus a microwave. We have enough space for a 24 inch install so we have narrowed it down to Miele or Bosch. We could also put just a microwave drawer by thermador but the speed oven is definitely more versatile.

Our questions are

is a speed oven overkill with what we already have? Because we will have the little steam oven on the range, having speed oven might be too much? Will we be missing out by just installing a MW drawer?
if you were to do a speed oven, which one would you go for. Miele and Bosch seems like good choices but I would love to hear from those who have used a speed oven day in day out
also is under counter a good place for a speed oven/MW drawer?

All microwave drawers are manufactured by Sharp. Thermador just slaps its name on one with a less-user-friendly control panel (it doesn't flip down) and jacks up the price.

Thanks for the response. We looked at the sharp model but I don’t think it has a keep warm function. We are taking out a warming drawer and putting in either a speed oven or a MW drawer.

Faster is a big part of what's nice about a speed oven, but its not just that. Combination modes combine regular heat with microwave cooking; this expands the range of things you might cook using microwaves, so its different from microwaving alone and not just faster than conventional baking. Its handy to have a second oven available when the other is being used for something else. Since most smaller ovens pre-heat faster than regular ones, even on regular settings (bake, convection bake, etc.), you may want to have these ovens be different sizes. You could consider a steam oven for your second oven, since that can do some things more easily than a regular oven (even here, you can mimic a steam oven by adding water). Of course, what's best for you depends a lot on what you want to cook. As I understand it, people don't like microwave/convection ovens as much as speed ovens; not sure why (I don't have one), though they tend to be cheaper. Also not sure about the microwave wearing out faster, or if its just that the microwave part wears out before a speed oven's other functions do. Hope this helps.

First of all, left-over food does not taste as good after MW-ing compared to warming it up on the stove or in the oven. IDK about nutritional value research but a friend of mine once did an experiment. What happens if you leave a baked or boiled potato on your counter *indefinitely*? It will spoil, will it not? He left a potato cooked in a MW on the counter. The potato did not spoil but disintegrated and he watched it to turn into small black pieces that were not rotten, just weird. Can anyone here interpret this fact? Does it mean that MW changes food structure? Anyway, I never cook in MW and only use it for reheating and - rarely - for defrosting food. I am now curious and I am going to repeat his experiment but this time, using a regular boiled potato as a "control", i.e., I'll leave two potatoes, one boiled and one MW'd, unrefrigerated and see what happens. I just need to get some conventionally grown potatoes as I'd feel sorry to do it with my expensive organic ones, LOL.

Speed oven question: Miele, Bosch, other, or nothing?

There are plenty of posts on the speed oven, particularly Miele. Most people that have one seem to like it. I have one and would recommend. I think most people, myself included, find the combination "speed cooking" to be of somewhat marginal utility for a variety of reasons and typically use it as either an oven or MW independently. It does work well for a few things, particularly baked potatoes. I can make chicken nuggets in about 8 mins rather than 12 which doesn't sound like much, but sometimes it is the difference between kids making or missing the bus. Nothing is going to toast particularly well compared to an actual toaster, I have a popup toaster that I keep in drawer for making actual toast. You can use your own cookware as long as they fit. You can fit a 12" pizza. 16-18" round will not fit. In any mode that uses MW, one must exercise a little caution with how metal cookware is used. The miele comes with a glass tray (mine came with 2) that can be used in any mode, I leave it in all the time and sort of use it as a removable dishwasher safe oven bottom. The 24" Miele seems to have the same interior dimensions as the 30" Miele (which I believe is relatively new, I don't think it was around when I was shopping about 1 1/2 years ago) and I'm pretty sure the 30" is essentially just the 24" with a trim kit. Despite being only 24" the Miele has roughly the same interior capacity as the Bosch 30" benchmark. The Miele is setup better for undercounter installation, since it doesn't need a turntable in MW mode and comes with glass trays that pull out whereas Bosch does not.

Hi Robert, yes, a little. I had a technician come out. it's fine, it's just not a full speed oven. So, you have to work a few things out by trial and error. For example, I do a baked potato on a beef setting now and it works just fine. he explained to me to go by density. so I write it down in a book that I keep near the oven for reference. that part is disappointing for me for sure, but I don't use the speed functions that often to be frank. It looks good, matches the oven, the microwave part of it works really well, and when I need the few things done speed wise, it's a bit trial and error, but we get there!

I currently have a Miele speed oven, however, the bake function stopped working some time ago and after $500 of repair costs without fixing the problem I now have a very expensive toaster oven (broil function works), and microwave (which is not it's best feature - my $150 Panasonic microwave is a better microwave). Up until it stopped working, I really liked the Miele and used it almost exclusively instead of my larger 30" oven. I need to replace it and am considering either the Bosch or the Wolf 24" (can't bring myself to get another Miele because of the aforementioned issue).

As to the question about installing under the counter -- that is where I have mine and I would say the only drawback is that you need to bend down to see the control panel properly. I have it installed behind where I have my cooktop (induction), so it is convenient to use when cooking on the stove.

As to the question of overkill -- yes, probably. Surely the steam oven on the Thermador will sort of do the same thing (except for microwaving) that the speed oven can do? That said, the difference in cost between the Thermador microwave and the Bosch speed oven is negligible and you would get regular oven capabilities along with a microwave. Also, the speed oven has a larger internal capacity (the Miele can fit a 9 x 13 pan) than I've seen in any steam oven, so that may be of interest.

I have the Miele Speed Oven and love it but mainly use it as a regular oven. We sometimes use the microwave feature. We don’t have a separate microwave. I also have the combi-steam oven and the two are our most used ovens. We love both.

Thank you all. I was talking with my wife and we thought we had decided on the Thermador drawer until rmsaustin brought up the fact that Bosch speed oven is not that much more expensive! I just checked the price and its the same price! Wow. Gives us something to talk about... thanks again for all the responses!
