Are you buying from a "lighting" store or a large box outlet store. If it's a lighting store they should be able to tell you which ones go with which. If not, go to one and look to see if it's done there. I think you can mix and match as long as it is in the same manufacuturer line. You might want to check around to see if you can find a line that already has that in a similar style your interested in. Well, what is your goal with the track lighting? Are you using it as a decorative fixture, in the same way you might use a ceiling pendant or chandelier? Or are you wanting it to disappear and just have a source of light? If you were putting in a chandelier or a pendant, would you pick white or silver or bronze? If you are thinking of the lighting as an accessory and decorative, use that as your guide.

240.5(B)(2) tells we can use #18 FIXTURE WIRE tapped off a 20 amp circuit for 15' or less, and #16 for 30' or less. This is the wire that is part of a fixture. With track lighting the fixture starts at the live end. The wire/raceway you are talking about is NOT a "tap". It is still part of the branch circuit. Why the heck would he want to do this anyway? What is he saving? If he did/does do this does he know he is limited to 6 amps per tap? That is what #18 fixture wires is rated for.

Congratulations on the new condo! While recessed lighting looks sleeker than track lighting, I don't see any urgency in replacing the track lighting since you have other remodeling priorities (unless you really, really hate it). Unless this is a flip and you need to please some buyer in the near future, replacing the track could easily wait for a year or two. If the track only bothers you a little, you could look at keeping the track but replacing the track heads. There are only really three types of tracks, so once you figure out which standard yours is, you can buy heads that work on it, with a different look and maybe a different beam angle (I see "hot spots" on the cabinets from the current heads). Do you expect to sit at the counter a lot, or only occasionally? Backless stools generally aren't as comfortable as ones with back support. I love the look of the ones you chose, though.
