Finally something worth posting about--stuffed flounder dinner

So after complaining during my last post that nothing exciting is happening in my kitchen, today I am making a fancy stuffed flounder meal for our 2-year anniversary. Here's what I am planning:


Crab stuffed flounder served on a bed of spinach rice pilaf. Might add carrots and peas to the pilaf instead of spinach, just for an additional color. Either way the veggies for the pilaf will be frozen, I don't have fresh spinach or peas right now. We have been eating so many green beans from the garden we are burned out on green beans for now.

Steamed broccoli, since it is a favorite treat of DH's.

A salad filled with lots of fresh vegetables.

Buttermilk banana cake with cream cheese frosting, a recipe I have been wanting to try.


I'd like to serve white wine sangria but hubs doesn't like it. i think we may be out of other white wine so I don't know. Hubs doesn't like champagne either . . . I may have to open the bottle of sparkling white grape juice that has been taking up space in the back of the fridge "just in case" for far to long. Just in case I'm serving champagne and someone doesn't drink alcohol . . . I think it's time I faced the fact that ain't gonna happen any time soon if it ever was likely to happen.


Wondering about making a sauce for the flounder . . . gonna bake it.


I've saved one fresh peach and have champagne and peach ginger flavored soda water. Too bad hubs hates sweet drinks, it would make a heck of a nice bellini type cocktail.
