Betty, I'm happy to. Here is the Tomato Marmalade recipe from Farm Journal, it's one of Elery's favorites. I'm saving some of Beachlily's Meyer lemons she gifted me with, they're sliced and frozen, waiting for ripe tomatoes to make this marmalade. Tomato Marmalade Recipe Makes about 9 half-pint jars 3 qt. ripe tomatoes (about 5 1/2 pounds) 3 oranges 2 lemons 4 sticks cinnamon 6 whole allspice 1 tbsp. whole cloves 6 c. sugar 1 tsp. salt Peel tomatoes and cut in small pieces. Drain. Slice oranges and lemons very thin, then quarter slices. Tie cinnamon, allspice, and cloves in a cheesecloth bag. Place tomatoes in large kettle. Add sugar and salt; stir until dissolved. Add oranges, lemons, and spice bag. Bring to a boil, stirring constantly. Continue to boil rapidly, stirring constantly, until thick and clear (about 50 minutes). Remove from heat; skim off foam. Fill hot marmalade into hot, sterilized half-pint jars, leaving . inch of head space. Wipe rims of jars with a dampened, clean paper towel; adjust two-piece metal canning lids. Process 10 minutes in a boiling water bath. This recipe I just found on a blog called "Once Upon A Chef", the author says she adapted it from a King Arthur Flour recipe. Chocolate Zucchini Bread Servings: One 8-1/2 x 4-1/2-inch loaf Ingredients 1 stick (1/2 cup) unsalted butter 3/4 cup plus 2 tablespoons light brown sugar, packed 2 large eggs 1 teaspoon vanilla extract 1-2/3 cups all purpose flour, spooned into measuring cup and leveled off with a knife 1/3 cup Dutch-process cocoa powder (ok to substitute natural cocoa powder) 3/4 teaspoon salt 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon espresso powder or instant coffee (optional) 2 cups shredded zucchini (from 1-2 zucchini), gently packed 1 cup semi-sweet chocolate chips Instructions Preheat the oven to 350 degrees and grease an 8-1/2" x 4-1/2" loaf pan with nonstick cooking spray. Place the butter in a large microwave-safe mixing bowl and microwave for one minute, or until just melted. Stir in the brown sugar until completely smooth. Add the eggs and vanilla and stir until incorporated. (Be sure to add the eggs after the brown sugar is mixed in, as the hot butter alone could cook the eggs.) Whisk together the flour, cocoa powder, salt, baking powder, baking soda and instant coffee (if using) in a medium bowl. Add to the butter mixture and stir until well combined. It will be very thick. Stir in the shredded zucchini and chocolate chips. (It will still be thick -- that's okay.) Spoon the batter into the prepared loaf pan and spread evenly. Bake for 60-65 minutes, or until a toothpick or cake tester inserted into the center comes out clean (save for perhaps a smear from the melted chocolate chips). Let the loaf cool on a rack for about 10 minutes before turning out onto a rack to cool completely. This was good and I'd definitely make it again, maybe in mini-muffin form next time, it's rich and sweet and just a couple of bites might be enough. If not, well then, people would just have to eat a couple of the mini muffins! Annie

Since they're foodies I would do a vegetable goat cheese terrine. It looks hard but it's not really and it serves way more than four. Eggplant, Roasted Pepper, and Goat Cheese Terrine with Parsley Sauce Gourmet : July 1993 Yield: Serves 4 with leftovers ingredients 2 eggplants (about 2-1/2 pounds total), cut lengthwise into 1/2-inch-thick slices 1/3 cup olive oil 1/4 cup bottled black olive paste such as tapenade or olivada (available at specialty foods shops and some supermarkets) 3 red bell peppers, each roasted (procedure follows) and cut lengthwise into 3 sections 7 ounces soft mild goat cheese, such as Montrachet, sliced thin parsley sauce (recipe follows) as an accompaniment parsley springs for garnish if desired For parsley sauce: 1/2 cup chopped fresh parsley leaves, preferably flat-leaved 1 small garlic clove, sliced 4 teaspoons balsamic vinegar 2 tablespoons water 6 tablespoons extra-virgin olive oil preparation Preheat the broiler. Arrange the eggplant slices in one layer on baking sheets, brush both sides of the eggplant with the oil, and sprinkle them with salt to taste. Broil the eggplant in batches about 4 inches from the heat for 4 to 5 minutes on each side, or until it is golden and tender, and transfer it with a metal spatula to paper towels to drain. Line a loaf pan, 8 1/2 by 4 1/2 by 2 1/2 inches, with plastic wrap, leaving a 3-inch overhang, and in it arrange the eggplant, the olive paste, the bell peppers, and the goat cheese in several layers, beginning and ending with the eggplant. Cover the eggplant with the plastic overhang, weight the terrine with a 3-to-4-pound weight (such as a loaf pan filled with canned goods), and chill it for 24 hours. (The terrine may be made 3 days in advance). Remove the weight, invert the terrine onto a cutting board, and discard the plastic wrap. Cut four 3/4-inch-thick slices from the terrine, pour about 2 tablespoons of the parsley sauce onto the center of each of 4 plates, tilting the plates to spread the sauce, and arrange a slice of the terrine on each plate. Garnish each serving with a parsley spring. To roast peppers: Using a long-handled fork char the peppers over an open flame, turning them, for 2 to 3 minutes, or until the skins are blackened. (Or broil the peppers on the rack of a broiler pan under a preheated broiler about 2 inches from the heat, turning them every 5 minutes, for 15 to 25 minutes, or until the skins are blistered and charred.) Transfer the peppers to a bowl and let them steam, covered until they are cool enough to handle. Keeping the peppers whole, peel them starting at the blossom end, cut off the tops, and discard the seeds and ribs. (Wear rubber gloves when handling chilies.) Parsley sauce: In a blender pur the parsley and the garlic with the vinegar, the water, the oil, and salt and pepper to taste until the sauce is smooth and strain it through a fine sieve set over a small bowl, pressing hard on the solids. Makes about 1/2 cup.

All my sweets are gone...I finished them off last night!! Nashville....GORGEOUS plate! Bumble, I also like your pie plates. The scalloped one is just fabulous!!! And the pumpkin pie dish has a wonderful design. And your pie server is so pretty!!! Is a small tablecloth or a towel? I like the design very much! What about baked apples or pears with a GF crumble stuffing (you could use GF granola), using vegan margarine? You could add plumped dried cranberries for a holiday twist. They could be made ready to bake and bake during the meal. There are really good dairy free frozen desserts available and Trader Joe's has a wonderful squirt canned whipped vegan topping that tastes exactly like whipped cream.
