What Did You Have For Lunch Today?

This is my lunch and supper. A baked potato, cottage cheese, corn on the cob and a fresh tomato plus iced tea to drink. The tomato was from my garden the sweet corn from my daughters. What did you have today?

    A meatloaf sandwich. Pretty dull.

    Oh, no. A properly made hot meatloaf sandwich with some of the baked tomatoey stuff on the top of the meatloaf is a culinary joy, especially if you have a nice bread and warmed it a bit so the bread is warm and yummy but not too toasty.

    I always make more meatloaf than we can eat specifically for sandwiches. Yum. But I'm not doing so well today so lunch was my last strawberry popsicle. I washed out the molds and went ahead and made my lemon/mint popsicles.

    Mission(s) accomplished: -got up, took dogs out, changed bed, put sheets in washer, went to grocery store, went back home, put sheets in dryer -went to work, on morning break returned a pair of pants and bought lottery tickets -on lunch took dogs out, made two batches of apple pie filling, folded sheets -back to work, paid parking ticket on afternoon break -hair done right after work, plus eyebrows -dogs out again, grocery store AGAIN so I won't have to go on Saturday (main purpose in the morning was to pick up apples to make filling at lunch) , ran dishwasher while making two apple pies, unloaded dishwasher, did the hand dishes and cleaned up the pastry mess, took the compost out, did a couple of little things in the greenhouse -waiting to watch movie with son and his girlfriend. *Btw... I was a little frazzled and took a gulp of egg wash instead of the peach juice I meant to drink. Yuck.

    Lunch was Firehouse subs, I noticed they sell their 5 gallon pickle buckets with lids for $2 each. Proceeds go to charity. Might go back and get one for my KT laundry soap. Right now I use a square kitty litter bucket.

    I've actually made that before and it was really good! I used veggie broth instead of chicken broth and used the immersion blender to blend it. I do love soup but I can rarely order it since most use meat stock, which makes me sad.

    i had a fried bologna sandwich w/ white bread. an all around splurge for me lol i don't eat lunchmeat much, don't fry things infact i blot my fried low fat beef bologna LOL and don't eat white bread ever. it's a comfort food to me, it's from my childhood and today was cool and cloudy at 73 in orlando, a gloomy day needing comfort food :-) i made paella valencia for dinner, a cookinglight recipe. i'll deal w/ boning out yesterday's turkey tomorrow a.m. ~ liz

    I SWEAR I left a cup of shelled shedder lobster in a small glass bowl in the fridge. But I cannot find it and of course (wink) no one has seen it. A lot a gaslighting going on. Everyone of us has that built in sensor that reminds up that we’ve got that unfinished mug of coffee, 1/3rd cookie, 2 more sips of beer.

    My memory register did not zero out on the shelled shedder. Even if it had been 3 AM and I’d guzzled 15 beers, I would KNOW. Brakes may fail, the electricity go out, the Wi-Fi fizzle; but the “one bite left” sensor never lets me down.


    So, not wanting to tear refrigerator #1 apart, I drank iced tea and munched on dill pickle slices for lunch. I may need to buy a Body Cam, Go Cam or some RFID buttons. I mean, at 9:30 PM, I’d know it if I ate the last 5 ounces, wouldn’t I?

    Tricolor quinoa cooked with walnuts and dried cranberries topped with smoked turkey and hunks of fresh mozzarella and later I had a big bowl of toffee ice cream with homemade caramel sauce.

    I made a potato frittata with yellow potatoes (6), thyme, onion, red bell pepper, Habanero chili, Monterey Jack cheese (in the middle), Cheddar cheese (on top), and eight eggs. This makes six servings, and so we now have some leftovers for later lunches. It reheats well.

    Yup, I do love a meat loaf sandwich. In fact I made the meatloaf mid afternoon and never did eat any of it hot. I made the whole thing for sandwiches.

    Breakfast/lunch and dinner was queso fundito with chicken and steak from a local Mexican place. I picked it up on my way to work this evening. It has chicken,steak,onions,poblanos, mushrooms and tomatoes. And chihuahua cheese.

    Low carb, high cheese. The perfect meal. And I won't have to eat again until tommorow afternoon!

    I fried a small corn tortilla, smeared refried beans on top and shredded cheese.

    Followed with a pear I got from Harry & David. The pears they ship now are not as good as the Rivieras they ship in the winter. I also got some apples. They were so-so too, both from out of the country.

    Left overs from last nights dinner: sweet and sour chicken, glazed shiitake mushrooms with bok choy (first time I've made that and they came out really good) and roasted ginger sesame green beans and a little brown rice.

    I like anything I've had so far that has had okra in it. I always buy it when I find it at the farmers' markets, but I haven't been to any of those lately.

    We skipped lunch because we had a big breakfast. I indulged in one of my favorites - chicken fried steak covered in gravy with crispy hash browns on the side. It's been several hours since we ate and I'm just now feeling pangs of hunger.

    Dinner is going to be BATS (bacon, avocado and tomato sandwiches) and corn on the cob from the farmers market.

    Meatloaf sandwich...a little taste of heaven. I just had some sliced banana with all Bran cereal. More like brunch. I have two meatloaves in the freezer just waiting for when I want meatloaf sandwiches. :-))))

    We had brunch today instead of tomorrow. DH made us omelets with shrimp green onions salsa and cheese. We had blueberries off of our blueberry bush and a lovely cup of tea.

    Tomorrow morning DH will leave early for his ride on his bike. So no nice breakfast for me unless I make it myself. Not that likely...

    For supper I had angel hair pasta with peas cheese and tomato sauce and oven-roasted chicken thighs. DH had to work and usually eats something from take out which he picks up on the way home on Saturday nights.

    I have to eat a banana a day so that will be dessert. I'm eating it very late and I don't usually eat this late but brunch was very big and filling. And later in the day than I eat usually. (If I don't eat a banana or two my cramps will be even worse tomorrow. They were bad this morning as I ate a grapefruit yesterday and some roasted chestnuts the day before. I know I live dangerously.)

    This wasn't today, but it was the best lunch all week! I've never had it before, but I was craving watermelon and feta. Had to go out to get some feta.

    mmm... meatloaf sandwiches. Mine are always simple: toasted rustic bread, mustard and the meatloaf.

    Lunch today was veggie and egg fried rice with broccoli, summer squash, carrots and scallions -- had a bunch of veg from my Imperfect Foods box. Breakfast was scrambled eggs with pepper jack and veggie sausage patties (I had to try them, from Imperfect Foods again). Dinner was takeout and a Zoom call with a friend! Wild King salmon with a romanesco sauce, over a warm farro salad with olives. Dessert was my own blueberry-peach clafouti.

    Brunch was my usual : Heavy grained bread with mozzarella cheese on both sides, hardboiled egg slices and a sliced avocado grilled on the panini press. And a bowl of blueberries, blackberries, cherries ,and watermelon. Tonight's dinner was take out Chinese.

    Kathsgrdn, my traditional meat loaf sandwich is simple - good dense bread, and mayo, maybe dill pickle, and a bit of catsup (I coat the meatloaf in catsup and green pepper, so usually only need a bit more for the sandwich).

    I had my first and maybe only tomato sandwich of the summer (tomato does make my arthritis flare up - I do miss indulging in those fresh tomatoes from my neighbor's garden).

    I've been on vacation for the last two weeks. I can't say I've had lunch a single time. If I have, it's been a piece of fruit. Oh wait! I had lunch last week Monday. We went for a short road trips and I brought along egg salad sandwiches...... But seriously, when I'm not at work, I rarely eat lunch. I rarely eat breakfast either. Just supper.

    Today, Sunday, I enjoyed the leftovers (cold!) from last night’s on the fly dinner — linguini and red potatoes with garden basil pesto. And, yes, you betcha, I licked the plate clean of the remaining green tinted fragrant olive oil. Pesto is fantastic when made with ample good olive oil. It is double fantastic on pasta with freshly cooked potato slices, skin left on. Heavenly!

    Ooh, Debbie. Reminds me that I absolutely love really good tender egg salad. Rarely make it any longer. Tender HB eggs, medium chop, dry mustard, mayo, freshly ground black pepper. Served on tender sprouted wheat bread with tender romaine leaves. I miss that.

    I'm trying to make room in the freezer for leftovers from the turkey that I am going to roast, so I had a bowl of mixed vegetables (peas, carrots, lima beans, and kale or whatever frozen green was in that bag) and a couple of vegetarian "chicken" nuggets, mixed with a little sharp cheddar (which I also keep in the freezer since I don't go through it quickly enough.) I will likely do the same tomorrow, to cut down on the volume of vegetables and use up the nuggets. This was actually my breakfast.

    Later I will make some peach frozen yogurt by whirling some of the frozen peach slices and a cup of vanilla yogurt in my food chopper.

    Lunch was leftover Olive Garden appetizers from last night. A few calamari, toasted ravioli and stuffed ziti. Yum. Not healthy but an occasional treat.

    Today was pure watermelon. We came home Sunday night with a 35-pound beauty from my son's FIL's garden. Oh soooo sweet!

    Needless to say my biggest bowls are packed full and I won't be getting anything else in the fridge for a while!

    I had a Green Giant riced cauliflower casserole. I don't usually buy those types of boxed vegetables, too expensive and too sauced usually, but it was on sale, I had a coupon, and it sounded good. And it was good! very tasty, and I really couldn't tell that it wasn't real rice.
