Comments (31)Okay, I admit it. I overreacted. I guess I was just excited about doing something for someone and never hearing back I got my feelings hurt. I'm sorry if I upset anyone or made anyone scratch their head... And I can understand that some folks might be leery about giving any personal info out to a 'virtual' friend. I've met so many nice people over the internet in various forums..gardening, cooking, tomatoes, etc. that I forget there could be people that are more private about certain things. It's okay. Comments (26)Success!  IÂm thrilled to say that everyone loved the Tacos!  Thanks so much to all of you (Linda especially) who helped me with this. Yesh - I received a lot of flax this week over some of my decisions, but I stuck to my guns and was prepared to resign after the event if need be. However, these went over so well that I think we will be serving them at our Jazz Festival later in the year. No one there had ever heard of Walking Tacos before and I got some interesting comments from the kids as they came through the line.  Some were more than a little skeptical.  The one who was the loudest in her skepticism came back for seconds. :-) One kid said "These make me happy!" LOL - That was the Booster PresidentÂs son.  :-) I had prepared for 200 tacos  but as Linda predicted, we ate far less. I've not counted the remaining chip bags, but it was less than 150. I discovered that cooking ground meat in a Roaster Oven works really well.  If any of you cook bulk ground meat for your freezer or ??, you should try this.  I only used 10 lbs, but IÂm sure 15 would have worked too.  Just turn the oven up to about 400, place the meat in breaking it up as best as you can, and cover with the lid.  Every 10 minutes or so, stir and break up the meat more.  It will take about an hour to brown the meat.  I then drained the fat and placed it back into the RO with the water and spices and let it simmer with the lid off for about 40 minutes - stirring occasionally. So easy! After testing this method earlier in the week, I cooked the remaining 20 lbs in 2 Roaster Ovens 2 hours before heading to the school so that it would be hot and ready to go. I combined all the meat into one roaster which I plugged in at the school to keep warm. One of the difficulties of heading the food committee is that everyone has a different idea about food safety. One of the new moms who showed up to help, was not happy that I was serving the shredded lettuce right from the bag. I may yet hear more on this one  she may complain to "higher powers". My daughter is in counseling and I was told a long time ago that she will never accept anyonen in my life because she has become so accustom to it just being us, her me and her brother whom she has an issue with also. My husband does not see his sons because his ex does not allow. He has a court order for visitation everyother weekend but when he tries to see them or call them. She changes phone numbers emails and plans trips when he is to see them, go to court, well when we do they just tell her to allow the visits one son is severally disabled so its not easy see or talking to him the other two want to see him but when its time the youngest tells him that mom bought him something or is buying him something and cant come and she wont allow them to visit if we dont take all three. Which we would love to do. Hitting. I didnt hit him I fought back. there is a difference. We are in counseling and for those of you who have never had an illness mental or not congradulations. Your lucky. I was hopen for help in trying to make this family work. Was to help my daughter and ways to help my family. Yes I have failed in areas but it seems to me that I am on the right track by asking for help here and with thearpy. Im not a woman who sits on her butt and does nothing Im well educated and get along well with my family. I have a good job which in theses times is amazing. To some of you have posted positive things........thanks they were needed and appreciated. To the others well sounds like some are bitter or enjoy living the life of negativity. I am keeps my family safe all of them. I will not endanger my children for anyone not even myself happiness or gain. GOD trusted me with their love and care I just have come to a crossroad that is new and scary to me the thought of not raising a healthy happy well adjusted child or having a healthy marriage. Everyday will be a struggle for us all and everyday a challenge. That is what life is and to learn from them is what Im suppose to do. Maybe this marriage will not work. Maybe my daughter will grow up with men issues not just because of me but her father. Maybe my son will never find love or be independent in life. These things scare me, but I have to try and find a way to make life better for all. Why? because I love them all. Comments (24)You stated that pregnancy, unlike cancer, is a choice, in response to my question as to whether it would be ok for a man to divorce his wife while his daughter was undergoing chemo. The implication in that statement is that the pregnancy WAS her fault. Of course I am a parent, and I was married for many years. I responded to your post originally because, in response to organic_maria who suggested that the divorce may have deeply affected the girl, you said you did not think that was not the case. Divorce ALWAYS affects children deeply, even in homes where there is a lot of conflict. I do not believe that excellent fathers divorce their spouses while their children are in crisis - no matter what their age or who is responsible. It is very rare that someone needs to leave right this second - unless the father was being physically abused by his wife. I believe that what the girl needed during her pregnancy was parents who were devoting most of their emotional energy toward her, rather than concentrating on a divorce and/or a new relationship. I have yet to meet anyone, no matter who filed, who did not find the process of divorce after a long term marriage to be emotionally draining. I believe that excellent parents do not date while they are still married, even in states like mine where it takes a lot longer than a few months to divorce when you have kids. I believe that excellent parents (and sensible people in general) do not remarry with a matter of months after divorce. I am sure you have read the axiom about 1 year of recovery for every 5 years of marriage. There is a lot of truth to that.
