Can I get an undermount sink, if my cabinets are recessed under sink?

I have what another conversation called "recessed undersink cabinet". I am a bit indifferent to them, but we are looking to update our countertop and sink to Quartz with a SS undermount sink. While measuring the undercabinet to see how long of sink I could get, I started to question if the cabinet will be deep enough, with this lower portion recessed. The recessed part is about 8 1/2 inches below the counter top, and the recessed part is also 21 inches from the back of the cabinet box ( and there is wood there, not wall). the unrecess part is 23 inches from the back. From the top, the counter is 24 inches from the backsplash.

Do I have enough space for a sink that is 16 1/4'' depth (19.5'' at top edge), and bowl is 8 inches deep? how about one that 33x22x9? i have plenty of width, just worried about depth, to also install faucet, and not have bowl hit recessed part, and hopefully with no cabinetry adjustments.

which measurements should I be concerned about in choosing a sink?

You need to make a very accurate measurement from the bottom of the top to the top of the recess cabinet rail. Is it 8 1/2" or not? If so, an 8" deep sink will fit by 1/2". The other dimensions become irrelevant.

If your engineered stone is 2cm with a 2cm edge build up, the bottom of the stone has now moved up 2cm which is a strong 3/4". Now you've got 8 1/2" + 3/4" = 9 1/4" which will accommodate most sinks.

On a remodel, your cabinets may need to be shimmed on the top to get to level anyway, but I'd pick up the 1/16" + needed to get a Kohler 3821 into that top anyway. Make sure the sink you pick doesn't have a centered drain please; you want your disposal to clear.

I strongly recommend a large single bowl sink.

I was thinking about getting the Kohler Tresham drop in sink. It has a raised rim so I was thinking less water would get on the counter. I also liked that it already has the faucet holes in it so we wouldn't have to have the holes cut out. The bathtub and toilet are Kohler almond color so the sink would also be almond color. I like the look of the under-mount better and can get an almond in it. Thank you for your thoughts on this.

Thanks Jules8 for your feedback. I'm not too picky about spotting. This will be a bathroom used daily. I am glad to hear that there isn't splashing. I will be using a single hole Hansgrohe faucet. Thanks for the info about the slope, and as you've indicated it seems too shallow. I have a limited space for the sink in my vanity and this one provides a lot of interior space within the confines of my cabinet. If I decide to get another sink I will have to call the cabinet maker to double check the tolerance I have. The look of this sink is really nice though and I probably will stay with it.

babyboomer1001: 100% silicone is perfect caulk between a sink flange and the bottom of stone. Polyseamseal and other Latex caulks are not; they do not have the adhesive stickiness or flexibility of silicone. It's best if you can pull your sink, clean the sink flange and stone bottom, recaulk with silicone and reinstall the sink. If this isn't reasonably possible, use a stiff plastic shim or plastic laminate to gouge the caulk out, clean the gap with acetone, and recaulk with silicone. Ignoring a leaking sink flange can have catastrophic consequences if your top has been "rodded" or reinforced with steel. If the fabricator used the wrong rod and/or the wrong bedding the rod can rust and blow up your top. I've fixed about 8 of these so far and it runs around $1,000.00-$1,600.00.
