This is my take on oversized sinks (meaning sinks that are too big for the base cabinets): Although it is possible to make it work, you are sacrificing the integrity of the support the cabinet offers at a very critical point in the installation - at the sink cut-out. Another thing that would worry me is the fact that the stone guy said he does not use brackets. Glue simply will not be enough to hold the sink up with all the commotion going on inside it. If he plans on wedging the sink between the top and the cabinet, you will once again have support issues, since you will be lifting the granite off the cabinets and you will have support issues around the cut-out again. Routing the cabinet could work, but it has to be done very precisely - it has to hold up the sink without raising the top off the cabinet. We always advise our clients to have a sink that suits the base cabinet - not just for looks, but for practical purposes too.

We can make you a 33" sink with a 31" bowl that will fit in your 33" sink base. The interior of your cabinet should be 31 1/2" long. A tall family should own a shallower bowl with an offset drain. I have been retrofitting undermount sinks with straps and a slight positive reveal for 5 years or so and have never had a silicone joint turn black. Silicone "turns black" because of mold and mildew created by leaking clipped and blocked sinks. Clear silicone is an excellent choice for mounting stainless steel sinks. While it does have adhesive properties, its function is primarily that of a gasket. The straps do the work of holding the sink.
