Comments (4)Do not add hot peppers unless they are dried. Fresh peppers will reduce the acidity. For 8 pounds of peaches peeled, halved, pitted, treated for browning and drained you can try 6 cinnamon sticks (4 inches long), 1 1/2 tsp. whole allspice, 3/4 tsp. whole cloves. That would work out to 1 stick of cinnamon, 1/4 tsp. allspice berries and 1/8 tsp. cloves per jar for a yield of 6 pints. Place peaches in jars, add the spices and cover the peaches with hot water to which splenda has been added to taste. Be careful not to overdo. 1/2" headspace. Process boiling water bath as you would plain peaches in water - 25 minutes for pints, 30 minutes for quarts. I hope this helps. Comments (1)I just make my regular vanilla icecream and add chopped and welld rained frozen peaches....I put about half of the peaches in the blender to make puree and chunk up the rest..... But unless you either add some extra heavy cream or booze, it will get icy. I make a custard with 4 eggs and 2 cups of milk....when it coats the back of a spoon remove from heat and add a cup of sugar and stir to dissolve, add 2 cups of heavy cream and 2 tsps vanilla.,...cool and freeze. For peach, puree a cup of peach slices and add to the icecream mix....add some chunks if you wish....and 2 Tablespoons of peach schnapps. The alcohol keeps it from freezing into a solid chunk. Comments (32)arley, you are just a veritable fountain of information! Actually a local restaurant chain makes a very tasty (at least to me) Washington Red Appletini (their name for it). When asked the ingredients, they said Crown Royal, sour apple schnapps and pomegrante juice. I'm not very knowledgeable about mixed drinks but a friend insisted I try it. I could become a lush! So I guess I could purchase a bottle or 2. CR is my SIL's drink of choice but I have a feeling he gets the larger size. I'll check out Hobby Lobby. Neither Homegoods nor TJM had anything today. Comments (3)Was originally written for 250 ml jars (1/2 pints ) and suggested 6-8 jars. When modified to US measurements it equals approx. 4 pint jars. But as with all recipes that is an approximation because there are so many variables. Have an extra jar available so that it is kept soupy enough when jarring for proper heat penetration and note the longer processing time of 20-25 mins. if you use pints.
