So I chopped it real fine ... and made stuffed peppers.

I freeze it....wrap well in foil and then in plastic and freeze. Heats well in the oven.One of my sad stories was digging in the basement freezer to see what I could have for an easy meal. And finding a sort of oblong foil wrapped package and remembering wrapping some lasagna.....got it upstairs and thawed only to discover it was linen napkins, dampened but I ran out of time to iron....sigh....
I froze the other half. The half in the fridge needed 'et.
Another vote for freezing it. It reheats to very tasty!
