Seitan - Have you made it?


My DH can't have red meat so meal choices are few (chicken, fish,eggs). He loved ham and misses it most. I've been toying with the idea of making vegan pineapple glazed ham loaf - from seitan made with vital wheat gluten and garbanzo flour.

Have any of you made anything with seitan?

How about tempeh? Any experience there either?

I keep trying to write a helpful response and cutting it. I think my experience isn't strong enough to be useful, and I've never done faux. So consider this encouragement and interest. :)
