Discovered Carolina sauce!

OOOOOOOOOOO! Love this stuff! Found a place that makes it, but doesn't ship it.

DH found a recipe, but it was a bit sweet (not bad, just a bit sweet for my taste)

Now the burger place that has it is back open for outdoor dining and we bought their last 2 bottles of the stuff! (It is a 45 minute drive!)

I want to use it on everything, but until we find the perfect recipe, we have to ration it!

I would LOVE a tangy, not sweet recipe that is tried and true if anyone has one!

I believe this may be what you are requesting. We used to bring home half gallon bottles of a mustardy, peppery sauce when driving through SC on our way from FL to PA. About 40 years ago, we stopped for gas at a station in SC, where I bought a local newspaper to read in the car. This recipe was in the ‘Home’ section and I cut it out and saved it. When our bottled sauces were gone, I made the recipe and it was so similar to what we had been buying that we never stopped to buy sauce again.

SOUTH CAROLINA SAUCE

2/3 cup yellow prepared mustard

1/2 cup white sugar

1/4 cup light brown sugar

1 cup cider vinegar

2 Tbs. chili powder

1 tsp. black pepper

1 tsp. white pepper

1/4 tsp. cayenne pepper

5 drops Tabasco sauce

1/2 tsp. soy sauce

2 Tbs. butter

Combine all ingredients except soy sauce and butter in saucepan and simmer 10 minutes. Remove from heat and stir in soy sauce and butter. May be used as a basting sauce for barbecued meat or as a condiment when serving grilled pork, beef, or chicken.

Oops. didn't see I needed to respond. Yes, it does. I also take my bread dough and make bread "sticks". Pinch off dough, roll into fingers Roll in hot oil, roll in a mixture of paremsan,oregano and some black pepper Bake til done - watch, cheese on bottom tries to burn You can also add ground hot pepper to the dough, then make the fingers etc. My buddies at the pub all get excited when I arrive after my Sunday baking. I bake these and also lots of hot bread. I use the small loaf pans so that I can spread "the wealth". Oh, and did I tell you, I don't like eating hot or spicy food? I grow and process, bake, make jelly, sauce and pizza sauce for mini pizzas with these peppers -primarily for my husband! My reapers are still green. I wouldn't use that term Jason, I'd say uninformed. It is true that in small amounts of intermittent use by any of these "cleaners" is not harmful. We use Isopropyl alcohol on a regular basis because of it's attributes noted it the Wiki article, "Isopropyl alcohol dissolves a wide range of non-polar compounds. It also evaporates quickly, leaves nearly zero oil traces" but it is still listed as a "skin irritant" and requires gloves to be used in our facility. Why use anything harmful in any amount when a safe alternative is available? Those little Pre-Moistened Towelettes are available with and without alcohol, you have a choice!

I think it really boils down to the qty of peppers you need to dry. Personally, the top of the refrigerator and now using the stove are plenty for me. I continue to look into dehydrators with hopes that future harvests will be bigger.... However, in that case I would prob want to bottle sauces and that would leave me with few peppers to dry... Seems like a luxury for me to invest in a dehydrator at this point in my growing of hot peppers. I do have the benefit of a very dry climate for drying. Sure I would think different if I lived in the south or a humid climate. Thanks for the info! Much appreciated. dj

I didn't forget it, but it had been a long time since I'd made my mother's recipe for “chicken patties”. I just bake them. Made it a few weeks ago. I was going to make a mushroom gravy, and decided at the last minute that I didn't like the look of the mushrooms, so went scrounging in the kitchen there. Ended up with a marsala cream sauce which went very well. Today I rediscovered equipment. I was wracking my brain for something to chill and transport the Yorkshire pudding batter in that I wouldn't have to transfer to a pitcher. Lightbulb moment, I even remembered right where it was. A real Tupperware lidded batter bowl. I think it came from my parents' camping supplies. I was given a box from that some years back. It's not from my childhood—that one was pink and had no lid. I do seem to remember using this one a couple of times, but I couldn't say for what... it's perfect. This is why I keep things.

Nancyjane, if you list the ingredients in order, perhaps we could give you input as to the ratios?? Might be worth a try, with all of our collective cooking skills & experience!

NancyJane, the sweetness seems to be offset by the vinegar and peppers. You could try making half a recipe and see if you’d want to adjust the sugar to your taste.

Sherry, looking for the non-sweet, but thanks anyway. Pllog, will probably do less sweet and add if needed. Ruthanna, good idea about a half recipe. Carolb, there is no list of ingredients on the bottle.

I like the above recipe, and will half the sugar to start.

have you tried Georgia sauce?

it is yet another a/c vinegar based sauce. w/ brown sugar/mustard etc

GEORGIA BBQ SAUCE

Ingredients
- 1 1⁄2 cup apple cider vinegar
- 1⁄2 cup yellow mustard
- 1⁄2 cup ketchup
- 1⁄3 cup dark brown sugar
- 1 tsp. kosher salt
- 1⁄2 tsp. ground black pepper
- 1⁄4 tsp. cayenne
- 2 cloves garlic
Instructions

In a bowl, whisk together vinegar, mustard, ketchup, sugar, salt, pepper, cayenne, and garlic

ETA: I usually make my own barbeque sauce, but I do like an off-the-shelf option. The one I make is a sweet/hot catsup, apple cider vinegar, Tabasco, cayenne pepper, and brown sugar sauce, not what you are looking for, lol.
