Very true when it's recipes we learned from our Mothers, Grandmothers, etc... I have watched my mother cook, and she hardly ever used a recipe for everyday dishes.

That is sweet. I was born in a Plains state, but now live in the Southeast. My Mom always used seasonings, herbs and spices, so it's not new to me. I do "eyeball" many measurements, and taste as I cook.

Grew up east coast, learned to cook from yankee parents, spent my adult life in the midwest.....and that's the way I cook....I even make bread that way and pancakes and muffins. Not only a southern thing

My mom was from North Carolina and taught me to cook by adding "a smidge, pinch or dab" of spices. I still cook that way.

This isn't true for just Southerners, though. My German MIL was an incredible cook who rarely knew the exact amount of anything that she use in a recipe.

Far from just a Southern thing. My Grandmothers cooked that way, and were

hard pressed to give you amounts if you wanted a recipe...and then that was

passed to my Mom and Aunts. When I asked my Mom for a specific amount

of something in one of her recipes, her answer was: "oh, you'll be able to tell".

Not a Southerner in the family.

Watching A Chef’s Life, and Vivian is cooking just like this. She basically dumps granulated onion into the cornbread, adds sugar “because my mom did”.

I think it's a demarcation between those who can cook and those can't. I used to be a non cook and needed very precise instructions. I am now competent and can do fine with pinches and smidgens.

My mom didn't learn to cook growing up. So as a young bride she tried to learn from one of her aunts. She would ask how much or how long and the aunt would say something like "Vie feil vie ist genunf" roughly Yiddish for "as much as is enough." It's pretty universal.
