Choosing cheeses and storage-

A month ago we had a dinner table discussion about what our basic cheese needs might be.

We decided on a hard pecorino, feta, a blue, a goat, a cheddar, and mozzarella. Just to simplify what we like. We are fine for now without Swiss and others like manchego or Irish cheddar. (Costco selections always on the every 4 months purchase before covid)...a standard basic in the fridge door.

Once in a while we would treat with a 1/4 pound of a cheese monger selection. HumboltFog, etc....try something new. Way too expensive for fridge door daily cheese. Pre-covid a cheese might go ignored for a week or two. Now it is a quick snack.

I'm not complaining at all, but two pages of googling is odd about cheeses in our fridge, or saving for later. ...-get to know your cheese monger and only get small amounts weekly as they only have a 5-6 day shelf life.

Freezing is out of the question....on and on.

I freeze so many cheeses.

I have cold smoked cheese from the Fall and frozen that are excellent. And mozzarella frozen that are excellent.
