Plllog is right, do it in steps. My grandmother used to tell me the only way to eat an elephant was one bite at a time, LOL. Plus, there are some cinnamon roll recipes that let you make the dough and form the rolls today, put them in the refrigerator and then bake and frost tomorrow, stretching it out over two days.

Yes, there will be more butter and eggs, and more time and more cinnamon rolls. Meanwhile, stay safe and take it easy, we have lots of time right now.

Do you have that reicpe for "angel biscuits"? was popular here a few years back.....any how its a very easy dough.....that you refrigerate.....then pat out instead of roll.....and instead of cutting into biscuits you can spread with sort butter and brown sugar and cinnamon.

Ingredients

• 1 package dry yeast (about 2
  1/4 teaspoons)
• 1/4 cup warm water (100° to
  110°)
• 2 1/2 cups all-purpose flour
• 2 tablespoons sugar
• 1 teaspoon salt
• 1/2 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/4 cup chilled butter, cut
  into small pieces
• 1 cup low-fat buttermilk (1%)
• Butter-flavored cooking spra

Preparation

1. Dissolve yeast in warm water
   in a small bowl; let stand 5 minutes.
2. Lightly spoon flour into dry
   measuring cups; level with a knife. Combine flour, sugar, salt, baking
   powder, and baking soda in a large bowl. Cut in butter with a pastry
   blender or 2 knives until mixture resembles coarse meal. Add yeast mixture
   and buttermilk; stir just until moist. Cover and chill at least 2 hours or
   overnight.
3. Preheat oven to 450°.
4. Turn dough out onto a floured
   surface; knead lightly 6 times. Roll dough out to 1/2-inch thickness; cut
   with a 2 1/2-inch biscuit cutter. Place on a baking sheet coated with
   cooking spray. Spray tops lightly with cooking spray. Bake at 450° for 14
   minutes or until golden.

wow, that stinks. When I didn't have time to make regular cinnamon rolls, but had the craving, I'd use the recipe from one of my old cookbooks (Better Homes & Gardens or Betty Crocker) and make their quick cinnamon rolls or whatever they called them. It was just a basic biscuit dough... perhaps a bit sweeter, rolled out and spread w/ fillings, then rolled up, sliced, and baked. It took about 30 mins, including baking time, to satisfy a craving! :) LMK if you want me to find that recipe -- pretty sure it didn't use eggs and if it did use butter, it wasn't a huge amount.

Thank you all. Annie, love the "one bite at a time" analogy :-) . Linda, those Angel biscuits sound really good. In fact I think I will make a batch just as biscuits for our Easter dinner! I don't have buttermilk but hopefully the "sour milk" trick of adding vinegar to regular milk will still give me good results. p_m50, I still have (and still use sometimes) the BH&G cookbook my Mom got me for my birthday in 1974. I think I remember many years ago making cinnamon rolls from a recipe found in it, I will have to look!

@ediej1209 AL Zn 7, I can totally sympathize with the waste of eggs. I am down to about 8 eggs. I put 2 dozen on my most recent grocery order and got none. It blew my plan to not grocery shop again for a month.

Yeah, DH paid something like $4.00 for this dozen and he said there were only a couple dozen left in the case. :-(

I'm running out of eggs too. My sister lives in Mass and she said she's heard of chickens being stolen. She put a lock on her chicken coup!

I would live to have my own flock but we have so many predators, including huge hawks and even eagles. It would break my heart to lose them that way.

Edie, we have hawks, owls, a pair of eagles that nest by the farm, coyotes, black bears, bobcats, an occasional cougar. What killed the chickens last time? Raccoons, ugh.

I wanted my chickens to all be "free range", but the biggest predator here is the neighbor's dogs, so my ladies have fenced in "runs" and are only allowed out when I'm right there to watch them, like when I'm working in the garden. We just put bird netting over the top to keep the raptors out and we have buried the fence and lined it with rocks so nothing can dig in under.

It's a constant argument with nature but we got 11 nice fresh eggs today, compliments of the ladies.

Please don't blame the King Arthur mix! I made ours from the same mix last night, and the rolls are delicious, as they always are. Not sure what went wrong with your batch, but I'm so sorry it happened.

I know I’m late to the party, but I’ve used this recipe from King Arthur Flour to make cinnamon rolls several times for meetings. I used this particular recipe because it doesn’t have any eggs in it but turns our super soft & fluffy rolls. Add to that, there’s no melted butter for the filling, so it stays in place and doesn’t ooze out. It makes 16 rolls, so it’s good for meetings where my husband brings a treat from home.

I realize that your experience with the KAF mix was pretty bad, but this recipe is great. It’s super easy but turns out lovely rolls.
