What to do with a lot of Nutritional Yeast?

I picked up some Nutritional yeast at the Bulk Barn. Bud (cat) loves it sprinkled on his food, and I like it on popcorn. I know it takes the place of parmesan.

Since Bulk Barn has gone the way of we customers telling them what we want, and the employees retrieve it for us, I didn't question it when I said a scoop of yeast. It's light, so I figured it wouldn't cost much either. Geesh $10! But I have a good sized bag full, obviously.

What all can I put it in? I know it won't go bad, but I have a lot to use.

Tina- I live in TN, but IHGS lives outside of Indianapolis. Hmm not sure what she meant. I know she makes a butternut squash macaroni that has 1/2 cup nutritional yeast in it for 4 people. she also uses more than 2 tbsp in a vegan ceasar salad dressing etc. So in those meals an individual would eat more than 2 TBSP in a portion. When she sprinkles it on a bowl of popcorn, she probably eats 1 tbsp. We have recently started using it. We aren't vegans or even vegetarian, but we are cooking more and more vegetarian meals. Most of the time we just use it salad dressings, dips or sprinkled in bread coatings or on roasted vegetables. My husband and daughter like it on popcorn, but I don't.

If you don't do enough baking to keep sourdough starter going in the refrigerator it can be frozen. Spread it out on a cookie sheet covered with parchment paper. Let it air dry for a couple days...until it crumbles easily. Or, you can dry it in a dehydrator. Put it in a Zip-Lock or better still a Lock 'n Lock - type container & freeze crumbled. To use, add a tablespoon or two when making fresh dough. You can also freeze starter in liquid form. /tricia

I looked at the Innova, Ziwi, and Pitcairn(sp) information. Since I do not have cats, I did not look there. the two websites simply say what every other dog food manufacturer says---we do it better, use better ingredients and are safer than any other manufacturer. (They both use grains, BTW) There is nothing abou poisoning by products or any other threat. the Pitcairns web site is best summed up by this paragraph---- "ANHC was founded by Richard Pitcairn, DVM, in 1986 as a clinical and teaching center for the understanding and use of homeopathic medicine in the treatment of disease. We also emphasize the use of excellent nutrition using home-prepared & raw foods." No telling what stories they tell to convince people of the horrors of using pmanufactured foods.

I never minded the taste (enjoyed it actually) and it has never upset my tummy. But then, I pretty much have an iron gut and not many aromas offend me either (remember, I live on a farm...LOL). I'll be trying the dressing! It sounds delicious to me. It appears that the yeast is being used as an emulcifier to bind the other ingredients that have a tendency to separate. Maybe you could sub parmesean cheese, a light flavored mustard or mayo for a creamy version. I can't imagine even tasting it when mixed with the other strong flavored ingredients. Deanna

Popcorn, salad dressing,(excellent), and in a homemade cracker. (vegan, gluten-free)

The big deal with nutritional yeast is the B12 content. It's essential, but not available from plants, so vegans need to supplement their diets. It's also supposed to have complete protein, and may have other health benefits. Some nutritional yeast has added vitamins.

You can put it in anything. Sprinkle it on soup and in a sandwich. B12 can take heat and wet so long as it doesn't go on and on. Add it to any of your cooking.

This is an excellent recipe from my dear friend Sandy S. -- I like it over baked yams or baked sweet potatoes, black beans and quinoa. I use raw cashews and soak them overnight in water, which I will then use for the water in the recipe as noted. You can also use this as a dip for veggies.

Chipotle Crema using Nutritional Yeast:

1 C water

1/2 C vegetable oil

1/4 C apple cider vinegar

2 tsp soy sauce, tamari or coconut aminos

1/2 C raw slivered almonds or raw cashews

2 garlic cloves, peeled -- or less to taste

1 chipotle chile in adobo sauce or 1 T chipotle chile powder

3 T nutritional yeast

1 1/2 tsp chili powder

dash salt

Combine everything in a blender, on low for 1 minute, then increase to high and blend one more minute until smooth and creamy. Transfer to jar, can keep in fridge for up to 5 days.
