Can I can this cranberry sauce?
Comments (5)The only recipe I have that's similar is sweeter, more of a jam - but here it is.... 8 cups of peeled and diced apple (and firm apple like Granny Smith won't cook down as well) 4 cups whole cranberries 6 cups sugar 1 cup water 2 lemons, zested and juiced Combine the apples, cranberries, sugar and water in a large pot. Bring to a boil, skimming foam. Cook 10-15 minutes, or until the cranberries pop and apples soften. Add lemon zest and juice and simmer until the liquid in the pot begins to thicken - then cook, stirring until thick and syrup-y. Ladle into clean jars, process boiling water bath 10 minutes. I applaud you wanting to do things from scratch, but if you are anticipating busy months with a new baby, 1) your DH may very well understand and make some sacrifices himself, and 2) while it's not like freshly made, Ocean Spray whole cranberry sauce isn't awful. I have a BIL who loves that and keep it on hand for him when our local berries are out of season. He likes it cold so when I know he's coming to eat, I put a can in the refrigerator :)...See MoreLooking for cranberry sauce recipes for canning
Comments (17)Ellie Topp's Quick Apple Cranberry Chutney recipe for canning is similar to Zabby's but actually contains a much higher proportion of onion and pepper relative to the amount of cranberries, and less apple. Zabby's has a little less vinegar, but since the pH of cranberry juice is pretty similar to vinegar, I think Zabby's recipe is roughly equivalent to Ellie Topp's. Bullmastiff, here's a cranberry conserve recipe with nuts from the Ball Blue Book. I don't see why you couldn't leave out the raisins, and use the juice of one orange instead of the whole thing, since cranberries have enough natural pectin to set on their own. I would feel fine adding an apple since you're working so low in the pH range with those cranberries, but I can't find a comparable recipe with apples and nuts (the Nutty Plum Conserve has a higher proportion of nuts but is acidified with bottled lemon juice). Cranberry Conserve 1 orange (unpeeled), seeded and finely chopped 2 c water 4 c cranberries 1/2 c raisins 3 c granulated sugar 1/2 c chopped nuts Combine orange and water and bring to a boil over high heat. Reduce heat, partially cover, and boil until peel is tender, about 5 minutes. Add cranberries, raisins, and sugar, stirring until sugar dissolves. Return to a boil over medium-high heat, stirring frequently. Boil hard until mixture thickens, 10-15 minutes. Stir in nuts and cook, stirring constantly, for 5 minutes. Remove from heat and test gel. Skim foam and pack into hot half-pint jars, leaving 1/4 inch headspace. Process 15 minutes in BWB. The recipe note says to make sure your nuts don't smell stale, and that you can toast the nuts in a dry skillet to bring out their flavor. Makes about 4 8-oz jars. Melissa...See MoreCranberry sauce
Comments (37)Just finished up mine. Very traditional - cranberries, grated orange peel, orange juice (and the chopped up remains of the grated orange) sugar, cinnamon and a bit of grated ginger. No booze in this one - too many kids at the dinner. It smelled so good cooking and tastes even better. btw, I made spiced poached D'anjou pears for dessert for family Sunday dinner this weekend. They were a huge hit ;-)...See MoreCranberry Sauce -- What do you prefer/use?
Comments (25)Well, having said I used canned sauce with whole berries, I had quite a surprise on Wed night when I finally started to make my cranberry sauce. I had used Kroger's Quick List - order online, select pick-up time, go to special place in the parking lot, call number on sign, and ones groceries are carried out and put the the car. I've used it before with no problems. Not this time! I opened both cans and started to pour them into a mixing bowl so I could add the fresh orange juice and zest. They had given me the JELLIED cranberry sauce, not the one with whole berries! I'm sure there was a Kroger open somewhere at 11PM on Wed, but I wasn't going to get dressed again and go out. Fortunately, I had also ordered 2 packages of fresh cranberries to use in the Nantucket Pie I take to my pulmonary rehab for our Christmas party. Well, there's a first time for everything, so I followed the recipe on the bag, cooked it WAY down so it was very thick, added the fresh squeezed OJ (don't like to cook it - can make it bitter) and the fresh orange zest. Easy, peasy! And delicious. I will forget canned from now on....See MoreEileen
