Prepping John Boos walnut butcher block for install + undermount sink

Were in the home stretch of a kitchen renovation we've been planing for way too long.


I was in the basement organizing materials, and realized I hadn't given any thought to the finish on our counters. Originally we had planned on going with honed marble, but then I found this gorgeous John Boos Walnut butcher block on clearance for $200... for the whole kitchen. So I bought it.


The plan is to under mount a stainless steel sink. My concern isn't so much wear, as we like patina, but damage from water, food, etc.


The butcher block is currently just oiled, would it be a good idea to use some sort of sealer to really protect everything? We haven't come across many discussions on under mounting sinks in butcher block, so any help or suggestions would be appreciated.


I know it's a risk to mix wet areas and wood, and that it might not be perfect or last for decades. That's fine with us. It's a condo in a gentrifying part of town, not a forever home, and this was a very economical solution.
