Comments (20)Could commercially bottled orange juice (plus fresh orange zest) be substituted safely? I have other - cooking, not canning - recipes for things like blueberry sauce that use oj, and it ends up not tasting like orange but substantially compounding the blueberry taste. My husbands thinks that jams using water as the liquid end up tasting too bland, so I've been looking for some alternatives. Comments (2)Seems a bit much for 5 cups of fruit. The NCHFP recipe for spiced blueberry-peach jam has 8 cups of fruit (4 peach/4 blueberry and no added pectin) using a tad bit over 5 cups of sugar. I still thought the NHHFP recipe was a little too sweet, so when I make it again (since there's no added pectin, I don't have to worry about the pectin/sugar ratio), I'll add 2 cups-taste, add some more-taste, and sneak up on the sweetness :-)...See Moreblueberry lime jam question
Comments (1)That recipe reads: 4 1/2 C blueberries (not 4 1/2 C crushed blueberries). Following that - Crush blueberries one layer at a time and combine with pectin. I've taken that to mean, measure first, crush after. It sets that way, not too stiff so my best guess is I'm doing it right and not too few berries :)...See MoreBlueberry Peach Jam ???
Comments (2)Your recipe seems pretty much inline with other pectin recipes. I made black raspberry jam yesterday and it was 6 1/2 cups of sugar and 5 cups of mashed fruit. Here a recipe from my files that is a longer cook (no pectin) for something similar. Blueberry, Peach, Frangelico Jam CF Combo (Lpink and Annie) Well, it started as a sauce, and Nancy (wizardnm) posted it. Lpinkmountain and I turned it into jam at our "jamming weekend", so here's the updated jam recipe. LOL Just can't leave well enough alone, you know, we added the lemon zest, removed a cup of water and used a cheaper hazelnut liquor. It's yummy, though. 2 cups blueberries or raspberries 1 cup sugar 2 peaches, peeled and diced 2 tablespoons lemon juice 1 teaspoon grated lemon rind 2 tablespoons Frangelico Put all ingredients in a pan except Frangelico.
