Nigella’s Christmas Table

last modified: 6 years ago

I have a thing about her at the moment after watching her Christmas Special. I liked her food. I especially liked her red cabbage with cranberries.

I searched for the exact recipe but only came up with ‘not online’.

Anyway, the recipe was basically

A small red cabbage finely sliced

A red onion halved and sliced into half moons

Teaspoon Cinnamon

Pinch of cloves

Tablespoon of soft brown sugar

Salt

About half cup of dried cranberries

About a pound of fresh cranberries or a packet of frozen.

Add all to a pot, stir and add apple juice about half way up these ingredients.

Simmer till tender with lid on.

Also her Brussel sprouts looked good.

A sliced leek softened in a little oil and butter.

Add a crushed garlic clove and a tablespoon of preserved lemon. ( I suppose you could add grated lemon peel if you couldn’t get these)

Half teaspoon cinnamon.

Add halved brussel sprouts ....about a pound looked like.

Salt

Stir to coat everything

Add a little hot water.

Put on lid and cook for 3-5 mins

She served Devilled eggs which she called Retro but in again.

To me she has a simple but tasty way of cooking.

I would like to try these at Christmas but will probably have to cook the traditional way.
