Chocolate covered dates with walnuts or almonds

We bought three packages of date rolls last week in Indio, and they are almost too sweet for me. So I thought I would cover them with dark chocolate, to cut down on the sweetness. One package has chopped almonds, one has chopped walnuts, and the third is a variety pack that also has coconut. In addition, we bought one package of Barhi dates, which are my favorite to eat by themselves.

These date rolls are very soft and squishy, and so I was wondering if I should freeze them before dipping them in chocolate or if overnight in the refrigerator would be enough. I think I will add more nuts to them as well and form them into shapes before freezing them.

I've never frozen dates before, and so I don't know how this will affect them, but I've stored them in the refrigerator, and that was not so great. However, I think overnight won't do much harm.

Have you made chocolate covered dates? The date rolls are made without the skin of the dates, and so they are a bit sticky and do not hold their shape well. I think if I chill them a bit they might firm up.

What suggestions do you have?
