Chicharrones (need more characters)

I have been buying chicharrones at Cárdenas Market in Cathedral City since July, but I only recently noticed that you are supposed to refrigerate them after opening. I've been doing this lately, as I cannot eat very much of them at a time (or shouldn't), but then I just bought some chicharrones at Ralphs in Westchester, and the package had no instructions about refrigerating them after opening them. Also, they were more like Cheetos than like the chicharrones I was used to having.

I like using chicharrones as a substitute for "bacon bits", which I never buy but still like, but I do not like the air-puffed version.

Do you buy chicharrones, and if so, how do you use them? The ones are Cárdenas Market are the best I've had, and I think I would like to incorporate them into more recipes.

There are many kinds of chicharrones, not sure which kind you are talking about.

I do enjoy have them, Mostly I make my own. Pork rind (cracklins), fried pork fat, sometimes. Chicken skin whenever I am not roasting the chicken.

The best chicharrones is when I have corned beef, I deep fry the thick layer of fat. Much better than bacon.

I don't put them in the refrigerator. They keep very well in a tightly capped container.

I like turning them into fine grains in a coffee grinder and sprinkle them on pasta or salads.

Have you tried microwave chicharrones? They are not bad for snacking.

I never looked at Honky Tonk Barbie's background. That is interesting as I could never get Shores of Time to succeed for me. Once I was sent the wrong plant and it took me until next season to find that out. Once it died over winter, once it took two years to bloom and then developed rust so badly that I had to pitch it in full bloom, and this last (and I do mean last) time it died over winter again (in it's pot). By contrast HTB has been a dream, if it had only been a little more colorfast it would rank way up there (Selman's record on the colorfast issue can be spotty)......Has it been winter tender for you?.......Maryl

HI -- There is two much texture and busy pattern with the brick going one way and the wood going another ...it's cluttered and dark looking . If the wood can be removed then do that and replace with drywall and or tile that in the same direction as the bricks , on the horizontal. I would paint that whole wall one color like the wall color . Then the texture speaks for itself . You say you don't want to spend too much so a live edge shelf/mantel would be very expensive . So basically you just need to simplify the look of that whole wall so it blends into the room and looks more modern .

I'm sure her response was horrid and it's always a surprise when someone we know well goes all-out "internet ranter". I have a relative that does this too. I thought I read from your post that she stopped engaging with you - assumed it was only on FB since we're all shut in. That's why I suggested the mute function rather than blocking someone. I have a few IRL friends who's opinions differ greatly and we sometimes clash. And there was one person with with I was familiar, but not close friends. When they moved, we became friends on FB and I learned that this wasn't someone I wanted to be associated with (weird rants, inappropriate content etc). Since we weren't friends, there was no motivation for me to save any kind of relationship at all. I have some people blocked for various reasons, but there are a couple I have muted because I need a break. In one case, it's a dog page that I got sick of the volume of posts and wanted to see other stuff for a while. The mute function means you're still connected, but you don't see anything from them on your feed for 30 days. Not trying to invalidate your feelings at all.

My best guess is that the ones that don't want the fridge are more processed. They also may have something on them (could be a food product rather than a chemical) that keeps them from going rancid, or a fancy kind of packaging that keeps them fresher to begin with.

Are the ones from CC store made?

Yes, the ones from Cathedral City are made by the store, and they definitely need to be refrigerated. I left some out without refrigeration, and they were not so good a week later. They also are terrible after microwaving - they become extremely tough. They are also not so good after heating in the toaster oven, but they are fine right out of the refrigerator.

The ones from Ralphs are completely different and appear to be mostly air, unlike the ones from the Latin market.

The only chicharrones I have had are pork. I do like crispy chicken skin, but I do not call it chicharrón. If it is made with chicken, it would be called Chicharrón de pollo; otherwise it is pork.

I have been thinking that it might be good sprinkled on a salad with bleu cheese dressing.
