Happy Thanksgiving, Canada!

A few weeks ago I was buying a turkey breast and the cashier advised that whole kosher turkeys were on a good sale, so I went back and bought a frozen 14-pounder instead. Today seems an appropriate day to cook it even though I’m south of CA. My plan was to thaw it in water but when a small stream air started bubbling up from the packaging I started googling and decided I’ll try the roast from frozen method. Not ideal from what I’m reading, but apparently acceptable? I’m hoping the fact that it’s kosher works in my favor. Feel free to try to talk me out of it if you have a better idea. For better or for worse it’s currently unwrapped, in the fridge in a roasting pan.
