FOAS, I can't help you with your turkey breast dilemma, but kudos for wanting to even roast one in CA! :-)

I was at my brother's yesterday and we did the turkey and all the trimmings. I took a corn casserole that Jude from Tennessee who was a regular contributor on the CF gave me the recipe, years ago. It was a huge hit.

We had our dinner here at the lake yesterday. It was a gorgeous Fall day and the leaves are spectacular. I had 21 for dinner , 6 stayed the entire weekend. My daughter and SIL and my BIL also have cottages on the lake so they took in the rest.

As luck would have it we had a power outage at about 5 PM and it lasted until 9:30. We have a large generator hardwired into the house so we were OK, About 1/2 hour of downtime while DH got it all up and running but it worked out fine. However, most on the lake were totally without power with turkeys in the oven!!!!. BBQ's must have been on overdrive!

Eventful , fun filled day ! Big breakfast for everyone here this AM and they are now all gone...love them dearly but was glad to see the last backside out the door!

FOAS, I have SVed big whole frozen turkeys many times. Perfect and safe results every time. The only issues with the SV method is that you will be cooking with the giblets inside the bird, and you can't have stuffing. Also, you need to give it the final touch to brown the skin.

For you, I would try to use the microwave.

The thermodynamic law governs the speed of heat travel inside meat and latent heat of fusion for melting ice. It will take a long while for the heat to cook a frozen turkey inside an oven without overcooking a lot of the turkey.

The law of electromagnetic physics says that microwave can start cooking meat from 1 to 1.5 inches deep inside the meat. That cuts down the travel distance for BTUs drastically.

Use low power setting, rotate and flip the turkey regularly. Microwave power inside an oven can be very even from reflections and "standing wave " creation.

Thanks DC I was thinking about SV but the whole leaking wrapping thing came into play. It’s been in a 325 oven for a couple hours, got the neck out (no giblets for some reason) and while I totally hear you about the temp thing, enough sources said it should be ok to give me some confidence. MW gives me none. ;)

Sounds like the Canadians started early! Nothing wrong with that. Jadip I’d be curious about the corn casserole. Trying to think of something, anything, to go with the turkey that the kids would actually eat.

I have cooked more than a few turkey breasts from frozen.,,,successfully I may say.
I trust you have one of those expensive flip thermometers that reads in an instant at the top of the probe. Use it to monitor the progress of the cook thaw operation.
When I need to thaw something fast...I usually submerge it into warm water is a plastic bag....but I think the mass of the turkey would leave it at the dangerous temp for too long.

The turkey was ok. It went much faster than online estimates led me to believe; after four hours it was quickly approaching target temp two hours early. With my wife still in meetings two hours away, I suppose the smart thing to do would have been carve it and reheat. But instead I throttled the oven way down in hopes of buying time. All I really bought was dryness. Live and learn. The house smelled good and the family ate a good amount, so not a total fail.

plllog - yes, I was hoping the salt would help retain water during the long cooking.

There's always more gravy on the leftovers. ;)

FOAS, I've tried to roast whole frozen turkeys, and they just didn't turn out as well as I hoped. I'm sorry yours was dry, but that's what cranberry sauce and gravy are for!
