Not very likely. The seeds need to ripen and change color before you can expect proper germination. Ideally, you want to be collecting fallen seeds rather than those harvested off the tree, as when fully ripe the samaras will fall off naturally. And yes, the seeds will require stratification.

Some maples do better green (but still need to be stratified), like many Asian species.

Sugar maple seeds need to ripen fully.

I am not aware of any Acer species that will germinate readily before the seeds are fully ripe. Which is typically in the fall when the samaras change color and begin to fall. The exceptions are Acer rubrum (red maple) and Acer saccharinum (silver maple) - these ripen and fall early in the year (late spring/early summer) but still need to be properly ripe for good germination. And also require stratification.

Thanks. They’re actually kind of a yellow green with what looks to be fully developed embryos with white film around them. A few look to be starting to turn brown.

So best let them ripen and then dry enough so they don't mold in your storage bag before the cold weather comes.
