Comments (13)Wow, I can't believe those got there already, I just mailed them yesterday! I used the rice flour in the swap cookies, Readinglady was kind enough to send it, along with the Callebaut chocolate I dipped the cookies in. I made another batch with cornstarch though, and it was just as good. I did use powdered sugar because I couldn't find superfine. I really liked the ones with the crystallized ginger, although I sent Jayne the mocha. That's because I had already eaten the extra ginger ones. LOL (Not really, Jayne, it was because you said you didn't care for gingersnaps so I figured ginger wasn't a good idea) It's definitely a keeper recipe, thanks to Readinglady. Comments (16)When we go back to Iowa we always stock up on those great cheese curds, esp. the fried ones! They are made fresh weekly in those little towns along the Miss. River in NE Iowa & NW Wisconsin but we place an order just before coming home & I have frozen a lot of them & they thaw fine & same texture .... chewy! I see cheese curds labelled x Wisc. down here in NM but they must be pasteurized or something as they don't have an expiration date & taste 'somewhat' like the fresh cheese curds. Annie: I guess I really hadn't looked for those cereal boxes since our son grew up but -like the crackerjacks- a fond childhood memory still! Glad both are still around for another generation! Comments (11)I always thought sugar cookies were pretty tasteless until I tried this recipe from Taste of Home: 24 Servings Prep: 15 min. + chilling Bake: 10 min./batch Ingredients * 1 cup butter, softened * 1 package (3 ounces) cream cheese, softened * 1 cup sugar * 1 egg yolk * 1/2 teaspoon Spice Islandî Pure Vanilla Extract * 1/4 teaspoon almond extract * 2-1/4 cups all-purpose flour * 1/2 teaspoon salt * 1/4 teaspoon baking soda * Tinted frosting or colored sugar Directions * In a bowl, cream butter, cream cheese and sugar. Beat in egg yolk * and extracts. Combine the flour, salt and baking soda; gradually * add to creamed mixture. Cover and refrigerate for 3 hours or until * easy to handle. * On a lightly floured surface, roll out dough to 1/8-in. thickness. * Cut with a 2-1/2-in. cookie cutter dipped in flour. Place 1 in. * apart on ungreased baking sheets. Bake at 375ð for 8-10 minutes * or until edges begin to brown. Cool for 2 minutes before removing * from pans to wire racks. Decorate as desired.
