For those looking for inexpensive muffin cups for cookie trays

If you have GFS near you, I saw a sleeve of 500 that worked out to 1.1 cent! They are plain white, but you could put a pretty colored doily underneath them all.

What is GFS? And why would you put muffin cups on cookie trays? Just curious.

I'll try them this week. I noticed the recipe is for a mini muffin pan and they look nice on a tray. The one I had was a regular muffin size so I think they changed it a bit. Either way they sound like a great recipe to keep and good for the coming holidays. Will post my results. Thanks.

For some reason, I can see the photos this time, and it usually works the opposite way. I do have a couple of mini muffin pans - one is nonstick and they other one is terrible for sticking, and I might have thrown it away. I also have three 3" diameter mini tart pans, but those would not make bite sized tarts. I've made the chocolate filling recipe several times over the years, but with less sugar.

We adored Sol's Dirt Bombs aka Duffins! They're a delicious bit of cinnamon and cardamon heaven! Dirt Bombs Yields: 12 muffins* 3 cups AP flour, minus 3 tablespoons 1 tablespoon baking powder Â½ teaspoon salt Â½ teaspoon ground nutmeg Â¼ teaspoon ground cardamon Â¾ cup (1 Â½ sticks) unsalted butter 1 cup granulated sugar 2 large eggs 1 cup whole milk ** Topping *** Â¾ cups unsalted butter, melted Â½ cup granulated sugar 1 Â½ teaspoons ground cinnamon Preheat oven to 400Âº F. Place the rack in the center position. Generously grease a 12-cup standard muffin pan. Sift the flour, baking powder, salt, nutmeg and cardamon into a mixing bowl. In another bowl, cream the butter and sugar until light and fluffy. Scrape the bowl down half way through. Mix in the eggs. Add the dry ingredients alternately with the milk in two additions, mixing gently by hand to incorporate all the flour. The batter will be on the stiff side, but airy. DonÂt over mix or beat the batter as this will make the muffins tough. Spoon the batter into the prepared pan, without smoothing the tops. Bake for about 25 minutes or until a cake tester inserted in the center comes out clean. As soon as the muffins are cool enough to handle, turn them out onto a wire rack. Add the melted butter to a bowl. In another bowl, mix the sugar and cinnamon. Dip the muffins (top, sides and bottom) in the butter, using a pastry brush -if necessary- to cover areas not buttered by dipping. Immediately roll the muffins in the cinnamon sugar mixture. Serve warm or at room temperature. *I've made this twice, and both times, this recipe has yielded 16 muffins instead of 12. **I substituted whole buttermilk for whole milk because I always have it on hand and prefer it for baking. *** The amounts listed for the sugar and cinnamon are not quite enough to coat all the muffins, so I recommend you double it. Sol My note: I used low fat buttermilk as that was all the store had, and they were delicious!

Shelly here's a favourite apple muffin recipe that is part of a weight loss plan that I have been using. I used powdered fructose as it doesn't raise the blood sugar level as quickly as white sugar. However you could substitute sugar if you wish. These are really good! I was having one every day for breakfast. The recipe doesn't call for much applesauce though, as part of the apple content is diced. I've made these several times and they always turn out perfect. They're in the green light - go ahead zone of Rick Gallops' glycemic index list of breakfast or snack foods for those who are trying to keep their sugar and insulin levels down. Light & diet friendly Ingredients: 3/4 cup All-Bran cereal 1 cup skim milk 2/3 cup whole wheat flour Sweetener - equivalent to 1/3 cup sugar 2 teasp baking powder 1/2 teasp baking soda 1/4 teasp salt 1 teasp allspice 1/2 teasp cloves 1 1/2 cups 2/3 cup raisins 1 large apple peeled and cut into 1/4 inch cubes 1 low-cholesterol (omega-3) egg, lightly beaten 2 teasp vegetable oil 1/2 cup unsweetened applesauce 1. Mix the All-Bran and skim milk in a bowl and let stand for a few minutes. 2. In a large bowl, mix the flour, sweetener, baking powder, baking soda, salt and spices. Stir in the oat bran, raisins and apple. 3. In a small bowl, combine the egg, vegetable oil and applesauce. Stir, along with the All-Bran mixture, into the dry ingredients. 4. Spoon the mixture into an oil-sprayed 12-muffin tray. Bake at 350F for 20 minutes or until lightly browned. Clare, GFS is gordon food service, sort of like a food service sam's club in large quantities. A lot of the restaraunts buy in bulk there. Some of the people were discussing how to plate cookies for gift trays to keep the cookies seperated. Muffin cups had been suggested, but they can be pricey. When I saw them there, and they worked out that cheaply, I thought of everyone here and the cookie trays.

Ah ha. Maybe they would work for organizing and cushioning cookies in those lidded tin boxes. Or am I just repeating your idea?

I wish I was near GFS...I use tons of cups in my cookie tins.

woodie, the bark is white chocolate, pistachio, dried cranberry--melt the chips, stir in the nuts and berries and spread in the pan, cool and break into pieces. Couldn't' be easier and adds nice color to a tray!

The pink/green frosted cookies are lemon flavored Italian cookies--very plain and cakey--not too sweet.

How do you afford the tins? I almost always do my cookie gifts on big Xmas paper plates and then wrap them in cello wrap and ribbons like a gift basket. i have a huge collection of tins but that's what I use for the various cookies after baking. And even then those tins are not cheap.

lol shaun. those are last year's, so if there *were* any left, they'd be pretty inedible by now.

granjan--I always buy tins after Christmas and store them away. Target has been really hit or miss--one year I hit a bonanza at a different store than my usual. The past 2 years, JoAnn's has had them piled to the ceiling for weeks after and I pick them up at 75%-90% off. I was in the other day, and doesn't seem like they got very many in this year, so we shall see if there are any left.

Plus, my family and closest friends send them back for a re-fill!! LOL!! So I only "lose" about half every year. I use medium to large tins, because I use the paper cups, they are cushioned, and I can't fit all my varieties in the small tins. (I did 19 varieties last year)

The tins that I store my cookies in were all my mom's and grandmother's. I think some are from the 30's or 40s!!

Nancy, those do look delicious. So putting the cookies in those muffin cups keep the sugar cookies from tasting like the peanut butter cookies and the jam thumbprints from tasting like the mint patties?

I really like that idea, even if it doesn't stop the transfer of flavors, everything just looks nice.

Nancy, I still remember that great pic from last year! And you bet they will give back the tins if you refill them, they would be fools if they didn't!
I buy tins every year after Cmas, and then never bake enough cookies to fill them, LOL..good way never to run out of tins!
