The only thing I can say is...Oh My God. I have never, ever had such delectable shortbread. This stuff just melts in your mouth. Here it is...and please, do NOT ask me why there are only 3 cookies on that plate. So Annie, did you use rice flour or cornstarch?

I used the rice flour in the swap cookies, Readinglady was kind enough to send it, along with the Callebaut chocolate I dipped the cookies in. I made another batch with cornstarch though, and it was just as good. I did use powdered sugar because I couldn't find superfine.

I really liked the ones with the crystallized ginger, although I sent Jayne the mocha. That's because I had already eaten the extra ginger ones. LOL (Not really, Jayne, it was because you said you didn't care for gingersnaps so I figured ginger wasn't a good idea)

It's definitely a keeper recipe, thanks to Readinglady. I'm glad you liked them, Sherry, I know you said you really enjoyed shortbread so I figured you'd be the "expert" cookie tester. (grin)

Stacy, Well, Roger helped. I ate the mocha ones, since he isn't crazy about coffee taste, even in chocolate, and half of the sugar sprinkled ones, and he ate the ginger ones since I am not a big ginger fan, and the other half of the sugar sprinkled ones. I can't believe we ate all of them, and all of the ones from Debbie. I am definitely going to make these this year. Best shortbread I have ever had!

I haven't even opened these all the way yet - DS#2 is still hovering and after he snuck some from another batch, I want to be sure we have some left for big brudder and dad. I don't dare let him get too close!

My cookies arrived today, and all I can say is OMG. The best shortbread I have EVER had. Thanks to you Annie for using readinglady's recipe to give us these fabulous cookies. It's a toss up between the mocha and the ginger, but I think the ginger is my favorite. I've decided to skip eating lunch during this cookie exchange, and just eat cookies. This is way too much fun!

Wow, three different kinds. I'm crossing my fingers that I might be on Annie's list.
