Annie's Cookies and Raw Apple Muffins

I just make Annie's wonderful Molasses Cookies and that and the weather together reminded me of a delicious muffin recipe I recently acquired from a friend. It is a recipe which has been in her family a long time.

At one time we had 2 locations of an eatery here which had breakfast pastries and everyone raved over their muffins. This muffin recipe is far better than any of theirs.

How long you cook these depends on your oven and how much you pour into into each muffin. They are much better if not over cooked and it usually takes my oven about 18 minutes.

Raw Apple Muffins

4 cups pealed and diced apples (any type except Granny Smith or Delicious)

1 cup sugar

2 eggs, beaten lightly

½ cup canola or vegetable oil

2 tsp vanilla

2 cups all purpose flour

2 tsp baking soda

2 tsp ground cinnamon

1 tsp salt

1 cup raisins or craisins

1 cup broken pecans

Preheat oven to 350.

In a large bowl mix the diced apples with the sugar and set aside.

In a second bowl beat eggs, oil and vanilla until well blended.

In bowl number three, using a fork, stir together the flour, soda, cinnamon and salt.

Stir the egg mixture into the apples until well blended. Sprinkle the flour mixture over and apple mixture and mix well. Stir in raisins and nuts.

Bake 25 minutes
