Question about making elderberry sweetened syrup

catherinet

My mind isn't doing so well these days with my memory. I usually write everything down, but now I can't find where I may have written it!

Several years ago I made an elderberry syrup, since we have so many on our property. I thickened and sweetened the juice and we use it on things like yogurt, cheesecake, etc., and it's wonderful.

My question is: I have the juice ready. Do I add sugar and then boil it down until thick, or do I boil it down first, then add the sugar? Maybe I wouldn't need so much sugar if I added it first, then boiled it down? Any ideas which way would be better?

Thanks!
