Comments (17)Recent personal favorite: ORANGE MARMALADE COFFEECAKE 1/4 cup butter 1/2 cup granulated sugar 1 large egg 1 Tblsp. orange zest 1 3/4 cup all-purpose flour 2 tsp. baking powder 1/2 tsp. salt 1/2 cup milk Topping: 3 Tblsp. melted butter 1 cup shredded coconut 3/4 cup orange marmalade 1 Tblsp. granulated sugar Preheat the oven to 350° F. Grease a ten-inch springform pan. Cream the butter and sugar together. Add the egg and the orange zest. Whisk the flour, baking powder and salt together in another bowl. Add about one-third of the flour mixture to the creamed mixture, then about one-half of the milk. Repeat with the flour, then milk, then flour to complete the mixing. Stir until just combined. Spread the batter in the prepared pan. With a pastry brush, spread melted butter on the top of the batter. For the topping, mix the coconut and marmalade together. Drop the topping onto the coffeecake in spoonfuls and smooth out. Sprinkle the Tblsp. of sugar over the topping. Bake 25 to 30 minutes or until done. Let it cool for five minutes. Comments (5)I'm happy to share the recipe, but I cannot guarantee the results if you use non Maine blueberries ;-) For the above pictured cake I used my last slightly shriveled Meyer Lemon, and it was incredible, I cannot believe how delicious and different the flavor was from a cake made with traditional lemon. If only I could grow Meyer Lemons in Maine.... Maine Wild Blueberry Cake 1/2 c unsalted butter, room temperature 1 lemon, zested 1 c granulated sugar 2 eggs, separated 1 t. vanilla 2 c flour 1 t baking powder 1/2 t kosher salt 2 c fresh or frozen Maine wild blueberries 1/2 cup buttermilk Preheat the oven to 350F. Beat egg whites until stiff. Add about ü cup of the sugar to keep them stiff. Cream butter with lemon zest and sugar until light and fluffy. Add the egg yolks and vanilla and beat until combined. Toss the blueberries with about 2 T of the flour to keep them from settling; whisk remaining flour, baking powder and salt together. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the beaten whites, then gently fold in the blueberries. This reminds me that I need to buy more brown sugar, as I am almost out but do not generally go through it very quickly. The Blueberry version looks good and easy, and I want to try that, especially since blueberries are inexpensive now. I'll have to check on fresh pineapples as well. I have a bunch of pineapple plants in my yard but it will be some time before I get pineapples from them again - they are slow growers....See MoreThree years old!
