Blueberry Cake or Muffins — from scratch, with garden blueberries

A freshly made blueberry cake or muffin makes a delicious breakfast treat or desert.

The well known ”Jordan Marsh Blueberry Muffins” recipe makes a delicious cake as well. You may have to adjust the bake time to reflect your choice of materials — glass, dark metal or light colored metal cake pan, ot muffin tin.

We used our own recently harvested blueberries, even a few that were not fully ripe. This will alter the color, but can give a brighter flavor to the finished product. (just don’t add too many pinkish unripened berries.

We like putting baker’s sugar over the top before putting the cake or muffins into the oven.

The Jordan Marsh Blueberry Muffin recipe is widely available online. Even at ATK.

I did the whole automated rain water thing for a year before I had to rip it all out because of moving to temporary house. I did learn that the best spray heads were the ones that send out 8 streams water in a circular direction and each head can be adjusted for optimal flow. On 15 gallon pots and smaller 1 spray head was plenty but needed to be adjusted depending on how big the pot was. On my big 30 gallon pots I used 3 spray heads and dialed them back to achieve the desired wetting pattern. I got a 2.5 hp pump to run it and it did fine for 10 plants at a time. My timer was set up on 3 zones, 10 plants at a time. I had to run the discharge pressure at 40-50 psi to get enough flow to the plants. To achieve the desired pressure I had to install circulation line with a valve coming of the discharge back to the rain tank and adjust the valve position to get 40-50 psi going to the plants. After toying with it a while and getting all the spray heads adjusted properly it was very nice!!!!!!!! I will never go back to hand watering again once our new house is built and every things automated again. One suggestion is to have a manifold with a 200 micron screen/filter for every zone. I had to clean the screens once every couple months with a tooth brush. I hand watered 50 something plants every day for several years and I'm here to tell you that automation is the way to go!!! I will never look back. Stay away from drip. Rain water is too dirty and you will have nothing but problems with drip. 1/2 inch Polly tube and the little 1/8 hose to a spray head that adjusts flow on a stick is the only way to go. The spray heads need to be the ones that send 8 individual streams. I can't stress that enough as all the other fan heads and bubbler heads clog up all the time.

Hi, Here´s an update of my experiment 1 month after repotting. There were ups and downs. The first couple of weeks i was struggling to get my PH right and now i´m using 3 tablespoons/10 L of vinegar everytime i water (that´s about PH 4,8) and now all my pots range from 4,8 - 5,7. I think this is working well, but if the ph keeps lowering more then i expect i´ll problably cut the vinegar to 2.5/2 Tbs/10L. Week #1 After reppoting I´ve feed all the plants with a solution of 10grms/10 L of 12.5-5-15 + Micronutrients (2L each Pot) and all the plants turned to a redish/brown 2 days after (photo in my last post). They looked not good at the end of week one. PH was going up and down as i was watering with regular tap water. Week #2 Started adding vinegar to water and PH of potting mix started lowering. All plants where growth stalled and redish/brown leaves didn´t developed any further. The exception come up with pot #5 which is a different and unknown cultivar that i bought already fruiting. This one´s leaves never turned pale green but some of the lower leaves started turning brown/purple. Fertilized with AS 2 times this week with 1/2 teaspoon /10L vinegar water(a little less than 1/2 tsp/2.5 gal). I gave each pot abou 1,5/2 L of this solution. Week #3 Fertilized once with the same AS dosis i did the week before. Some leaves started to show a scorch in the middle of the leaves and mostly the new ones started to burn a litlle on the leaves edges (maybe the AS solution is very strong or 1,5/2 L per plant is a lot, not sure here - i´m using 5 gal pots). Some pots showed up signs that something was not ok besides their color and the scortches, showing up some curled leaves, mostly the new ones. They were greener but kind of stalled. At this time, half the week was gone, and i stopped the AS fertilization and added 5grams/ of granular Organic fertilizer (half the recomend dosis) NPK 5-8-15 and Rocmagic Ironite as a source of nicronutrients with 1% Ca and 1% Mg. My goal here was to feed the plant with some nutrients that could be missing and to achieve the 3:1:2 ratio of NPK. Using this organic NPK and the AS i could get this ratio and and still use Fruitnuit´s fertilization program of AS (Feed N more times with a weak solution). Week #4 Temperatures turned from 60F(16C) average the first 3 weeks to 77F (25C) this week, and plants showed immediatly some growth and a lot of new vegetative buds and new shoots. Redish/brown seems to be fading away almost tottaly on older leaves by the end of the week, but all new leaves came up with a pale green color and just some of them with that redish/brown color especially on the borders. The older leaves were green almost like before re-potting. I was not really sure what to do here, i am sure the wheather was the most important factor of the plants recovery, not sure about the Organic NPK effect on this week´s growth. As thing were going ok, except for the pale green new leaves, I restarted the AS fertilization at the end of the week. Week #5 Temperatures droped again from 77F (25C) to 57F(14C) by day and 50F (10C) 50F by night, and the weather was very rainy and windy. Immediatly leaves and shoots stopped growing and the leaves turned everyday browner and browner. I still fertilized with AS once again this week, but leaves started to burn on the edges, so i stopped. Pot#5 is now with many leaves Brown/purple again. Pot #5 has more and more leaves colored purple. I think this is a lack of P, so i added 50 grams of Red Guano as a source of P only on this pot. I think weather had a dramatic influence on plant growth and i´m not sure of the contribute of the complete organic fertilizer. I still can´t get rid of the brown/red color on new leaves. I know brown/red leaves are normal in a spring with cold tempertures, and it´s true that when temperature raised to 77F (25C) leaves turned greener (pale green), but is it normal this leaf color with 57F(14C)? Or is there some nutrient missing too? Pale green color in new leaves seems to me like lack of N, but everytime i feed them with AS, there´s always a little burn on the edges and some burned tips too. What do you think of reducing to 1/4tsp AS/10L? 1,5/2L per bush in a 5 gallon pot seems ok? Must i fertilize with AS only when there is full sun? Pot #5, which as fruit, also has purple leaves and not many growth. It didn´t respond to AS (never did) and didn´t respond to the P in red guano yet (just feed them 3 days ago). Hope it recovers.. I´m hopping anyone can give me some advice of what´s going on pots #1 to #4 and specially #5. Thanks

BLUEBERRY FRENCH TOAST (serves 6-8) 12 slices day old white bread, crusts removed Two 8 oz pkg cream cheese 1 cup fresh or frozen blueberries 12 eggs 2 cups milk 1/3 cup maple syrup or honey Sauce: 1 cup sugar 2 TBL cornstarch 1 cup water 1 cup fresh or frozen blueberries 1 TBL butter or margarine Grease a 9x13" baking dish. Cut bread into 1" cubes. Place 1/2 in the prepared baking dish. Cut cream cheese into 1" cubes. Place over bread. Top w/blueberries & remaining bread. In a large bowl, beat eggs. Add milk & syrup. Mix well. Pour over bread mixture. Cover & chill 8 hours or overnight. Remove from refrigerator 30 minutes before baking. Heat oven to 350Â°. Cover & bake 30 minutes. Uncover. Bake 25-30 minutes more or until golden brown & center is set. Meanwhile, prepare sauce by combining sugar & cornstarch in a saucepan. Add water. Bring to a boil over medium heat. Boil 3 minutes, stirring constantly. Stir in blueberries. Reduce heat. Simmer 8-10 minutes or until berries have burst. Stir in butter until melted. Serve over French toast.~~From Fare to Remember ***If you don't want to make the sauce, it's also good with just maple syrup.

Jude, There are cute little mini loaf pans on the market also. I can get 6 mini loaves out of one large banana bread recipe. Here is a muffin recipe that tastes like pound cake to me! Sour Cream Muffins 2 eggs, beaten 1 cup sugar or less 1/2cup vegetable oil 1/2t vanilla 1/4t grated nutmeg 2 cups self-rising flour 1 cup sour cream 1 cup fresh blueberries, optional Mix egg, sugar, oil, vanilla, nutmeg. Stir flour into wet alternately with sour cream. Fold in blueberries. Put into 12 greased muffin cups or paper lined cups. Bake at 400 F for 15-20 minutes. Makes 12 muffins. When I make these w/o the blueberries, I brush the still warm from the oven muffins with melted butter and sprinkle the tops heavily with cinnamon sugar. Yummm.... Teresa

We have a few “culivated” blueberry plants and because of the birds and chipmunks (we’re in a clearing in the woods with nearby wetlands, we had to build a cage aarounf them. Just netting ws not enough. Even now, we have to keep an eye out for chippies or birds that sneak in and don’t know how to get out.

This year, I fed the songbirds late and to avoid the black bears, mounted two mesh ball feeders from the upstairs bedroom window. I love watching them — purple finches, goldfinches, Red Breasted grossbeaks, red bellied woodpecker, cardinals, chickadees, chipping sparrow (evolving trait, they are groundfeeders), titmice, nuthatches.

But, I think next summer I dont want as many birds hanging around. The catbirds are sweet birds, but they eat every berry that is not nailed down.

W have wild high bush and low bush blueberries and there are wild blueberries all over the mountain. The birds and bears get them.

The Blueberries in the cage are, iirc, Patriot, bluecrop, blue ray. Plus other plants we bought and havent yet planted in the ground. I think BBs are easy to propagate from softwood cuttings, so I hope to increase my plantings that way.

My husband picked the berries and inclued about 1/6 C that were not fully ripe, thus the pink purple color. But it also gave a bit brighter flavor, which is interesting. (so take THAT, Cedar waxwings!

BTW one summer while babysitting the best kids, I made a pie out of all green, unripe apples from the tree outside their cottage. I just added a bit more sugar. That pie is in my memory as one of my best apple pies ever. I regret that we don’t have an apple tree. Guess it will have to be Granny Smith.

I think it would work. I have made raspberry muffins from our Heritage raspberries and I probably used that recipe as a base. Raspberries are wetter, so perhaps you would want to use a bit less. Maybe boost the leavening? Got me. Add berries after you have combined everything (wet batter) and toss/turn gently to combine, of course. Don’t ”stir” or mix. The coarse baker’s sugar on the top gives a nice look and finish. I often reduce the suggested sugar amount in most recipes. I truly dislike nearly all ”bakery” muffins and cookies. Way too sweet or me. Even with better bakeries.

PS — you must know this, but do not wash or get the raspberries wet. Fresh raspberries best.

We live in an area where fresh blueberries are sold on the farms, u pick or already picked for you to purchase. I cannot tell you how many I made money picking blueberries. Most people my age did around here. We could work in the fields as young as 12 I believe.

I forgot to tell you about an ingredient. DH adds ~ 1/2 teaspoon of ground corriander. This is now often suggested by cooking magazines like Epicurious. There is something about coriander that complements the flavor of blueberry. I like it.

Yum, petalique, that looks delicious. Blueberries aren't quite ripe here, but they will be in a couple of weeks. They didn't like my soil, but there are a lot of U-pick farms around here, so I can pick all I need in season.

I suppose I ought to bake something. The raspberries would be a good idea, I have those just getting ripe.

That is interesting about the coriander. Makes sense, it has a brightness to it.

I made a blueberry bread recipe a couple weeks ago that was really tasty but didn't rise well because my baking power was old...as in over a decade old.... I scarfed it down anyway LOL!

I'll have to look into making a blueberry cake, never had such a thing. My BB's are almost fully ripe -- blue but not quite there yet. Oh, and the raspberries -- those will be coming in full-force in about another month, I'll have to make a mental note to try to adapt the BB bread recipe for the raspberries.

Annie1992 and mxk3 – how do you protect your raspberries from the birds? My regular catbirds want to wipe out all berries. My raspberry patch is too overgrown. The second year, I had July and fall raspberries.

Raspberries are yummy and pretty on a lemon-poppyseed cake. The recipe from Rose Levy Beranbaum‘s ”Cake Bible” is devine.

Thanks, mxk3. I want to send my catbirds and chipmunk to your garden for workshops.

I have some berry netting. It tends to tange in the foliage and then pull new growth off the plant. If I don’t pot it to the ground, the birds go under it. The chipmunks are incorrigible. We have a lots of stone walls, so they get away quickly.

Judi that looks great. I had blueberry cornmeal muffins once, very good. I didn't

expect them to be good but it's a good combo.

Oh, and as a pie challenged baker, I find that video hilarious! I like her approach to a cooking video! although she could have easily avoided blaspheming . . .

Sadly, my tart pan is ceramic and does not have a removable bottom, so I would have to fish it out. I should get myself a few more pie servers. I only have one small one that came with my silver set.

Here's the yogurt muffin recipe:

Oven at 375

1 c. plain yogurt (not Greek)

1 tsp baking soda

1/2 c. butter

2 eggs

1 tsp vanilla

2 c flour

1/2 tsp baking powder

1/2 tsp salt

1 c sugar

3/4 c something to mix in (fruit, choc chips, nuts, whatever)

Preheat oven to 375

Grease muffin tin and set aside.

In a bowl mix yogurt and baking soda. Set aside.

In a large bowl mix flour, baking powder, salt and sugar.

In another bowl, beat butter Add eggs one at a tie, then vanilla. Add to flour mix. Then add yogurt mix stirring just until combined. Stir in your mix in. Put in muffin tin and bake about 20 min or until done.

Can also add topping such as 2 Tb chopped walnut, 2 Tb brown sugar, 1 tsp cinnamon mixed together.

Some of my favorite combos: lemon poppy seed; apple cinnamon and walnut; blueberry; orange peel and cranberry; and of course mini choc chips.
