Ann_t's Blueberry Upside Down Cake substituting Pineapple

Earlier this week, I made ann_t's Blueberry Upside Down Cake. It was fantastic, but gave me a hankering for Pineapple Upside Down Cake. I found a recipe online from a trusted blog. It was ok, but not nearly as good as the Blueberry Upside Down Cake. It was take-your-breath-away, hurt-your-throat sweet, and I find few things to be too sweet.

Can I make the blueberry cake but substitute fresh pineapple?

Bbstx, Go for it. I think that cake would make a great Pineapple upside down cake. I don't see why you couldn't use just about any fruit.

The link to Ann's recipe also has a recipe for Pineapple upside down cake. This reminds me that I need to buy more brown sugar, as I am almost out but do not generally go through it very quickly.

The Blueberry version looks good and easy, and I want to try that, especially since blueberries are inexpensive now. I'll have to check on fresh pineapples as well. I have a bunch of pineapple plants in my yard but it will be some time before I get pineapples from them again - they are slow growers.

I buy blueberries here and there because my son likes them, but they're always those big, tasteless ones that I get year-round. Kind of like strawberries and tomatoes. I think I'll have to keep an eye out for "good" blueberries and hope that cooper being past season and alexa being pre-season means that another hour or two north I haven't missed it. Ann, your blueberry pudding/cake looks delicious and like seagrass, I think this "avid non-baker" can handle this recipe!

I used to make pineapple upside down cake in the restaurant in San Francisco where I worked in the mid 1970s, and I made it with fresh pineapple, which I simply cut into pieces, and there were no rings and therefore no holes. If you are using rings, you can cut them in half and arrange them differently, as in an "S" pattern. I had to make large quantities in the restaurant, and I was so tired after cutting up that many pineapples that I could not be bothered with cherries. It was a hippy style restaurant, and the cake always sold. I would make two 16" x 24" rectangular pans of that cake at once, and I had to make four more pans of two other items each night that I worked. I had to make a syrup from the pineapple juice that I collected (plus some brown sugar) because the fresh pineapples were tart.

Annie, I just ran across a few new recipes for rhubarb candy. I bet similar to your zucchini candy. Martha has one she slivers into thin strips and curls while still soft out of a low oven. I dehydrated slices last year for my granola. One batch was rock hard but did better second try. And this year I will sugar or maple syrup a little. I'm getting fineCooking hard copy now. Just skimming the new one. Two rhubarb recipes. A rhubarb fennel apple strudel, and a few sheet pan tarts. A roasted tomatillo/poblano salsa. So similar to the one I just made but I added rhubarb. I was off magazines for a few years except for the NewYorker and NYTimes weekend, but this one has been a good run so far. Nothing like a rest in the hammock outdoors with a magazine.... The 'rock hard' rhubarb was a good replacement for citrus all winter, after soaking in a bit hot water for a few hours. I made a batch of ginger, apple, rhubarb, grapefruit juice Sunday. Frozen into ice cubes for my tea.

Carolb, are your macadamia nuts ripe in June? I've always thought of them as a late summer crop. Interesting. BTW, how do you plan to force them open? Do you have one of those special macadamia nut openers? Plllog, yeah, there's a lot of stuff down here that isn't well known in most of the US, and that list was only what's available for sale in June, not including the year-round stuff like mulberry, banana, papaya, etc,,, or the things that fruit and aren't sold because they're too delicate like muntigia calabura (Jamaican Cherry). And then there are the various medicinal fruits only available from specialty shops. When I look at the lists from the bigger nurseries I have to look up a lot of them, too.

I just happen to have some fresh pineapple in the fridge, left over from Makayla's fair jam, a concoction of pineapple, mangoes, coconut and habaneros. So now I can make cake with the leftovers.

Mmmm, now that sounds like jam I might actually like.

Blueberry upside down cake also sounds like an upside down cake I'd like. Pineapple upside down cake is too sweet for me.
